For a Pur-Porc or an Italian, coarse type of salami, an Aw value is between 0.80 and 0.88. For a heavily dried French or Italian salami, an Aw value is between 0.65 and 0.75.
De term “windcirculatie wordt verhoogd” slaat op een verhoging van de ventillatie in de rijpingskamer of droogkamer. Het drogen wordt bij voobeeld gedaan in een droogkamer of droogcel. In zo’n cel kunnen, afhankelijk van de grootte, één of meerdere karren of rekken worden gezet, waarin de salami wordt opgehangen. De vochtigheid word aan de circulerende lucht onttrokken door bijvoorbeeld een warmte/koudewisselaar. Hierbij wordt warme vochtige lucht uit de droogkamer naar een koelelement getransporteerd,waar de vochtigheid als eis wordt uit de lucht gehaald en afgevoerd. Deze koude droge lucht word via een warmte element opgewarmd en terug in de droogkamer geblazen. Alternatief kan de vochtigheid aan de lucht worden onttrokken via een opgewarmde lavasteen (> 100°C), die het vocht uit de lucht opneemt als een spons. Bij af koelen van de steen wordt het water opgevangen.
