Werkwijze voor het vacuüm verpakken van eetwaar en verpakking daarbij toegepast.
De huidige uitvinding heeft betrekking op een werkwijze voor het vacuüm verpakken van eetwaar, meer bepaald vleeswaar.
Het is bekend vleeswaar luchtdicht te verpakken in een zak die is vervaardigd uit een doorzichtige kunststof, waarbij de vleeswaar in de zak wordt aangebracht, waarna de lucht uit de zak wordt weggezogen, en waarna, tenslotte, de open zijde van de zak wordt dichtgelast.
Een nadeel van deze bekende werkwijze is echter dat de vleeswaar die aldus wordt verpakt een ongewenste kleurverandering ondergaat en bijgevolg visueel minder aantrekkelijk wordt, hetgeen een negatieve invloed heeft op de waarde van de vleeswaar.
Het doel van de huidige uitvinding is aan het voornoemde en andere nadelen een oplossing te bieden.
Hiertoe betreft de uitvinding een werkwijze voor het verpakken van eetwaar, die in hoofdzaak bestaat uit het aanbrengen van de eetwaar in een verpakking; het vacuüm of nagenoeg vacuüm trekken van de ruimte in de verpakking; en het luchtdicht afsluiten van de verpakking, waarbij gebruik wordt gemaakt van een verpakking die is vervaardigd uit een ondoorschijnend en luchtondoorlatend materiaal.
De huidige uitvinding biedt het voordeel dat de eetwaar tijdens het verpakken en bewaren ervan verwonderlijk genoeg weinig of geen kleurveranderingen ondergaat, waardoor de eetwaar op visueel gebied haar waarde optimaal behoudt.
De huidige uitvinding heeft eveneens betrekking op een verpakking die kan worden toegepast bij de hierboven beschreven werkwijze en die in hoofdzaak bestaat uit een zak uit een ondoorschijnend en luchtondoorlatend materiaal.
Met het inzicht de kenmerken van de huidige uitvinding beter aan te tonen, wordt hierna, als voorbeeld zonder enig beperkend karakter, een voorkeurdragende werkwijze volgens de uitvinding beschreven voor het vacuüm verpakken van eetwaar, alsmede een verpakking die daarbij kan worden toegepast, met verwijzing naar de bijgaande figuren, waarin:
figuur 1 een verpakking volgens de uitvinding weergeeft vóór gebruik; figuur 2 een verpakking weergeeft zoals in figuur 1, waarin eetwaar vacuüm verpakt is.
In figuur 1 is een verpakking 1 volgens de uitvinding weergegeven die in hoofdzaak bestaat uit twee tegen elkaar geplaatste kunststofvellen 2, 3 die bij voorkeur eenzelfde rechthoekige omtreksvorm vertonen.
Beide kunststofvellen 2 en 3 zijn langsheen een gedeelte van hun omtrek aan elkaar gelast ter vorming van een zak die aan een gedeelte van zijn omtreksrand is voorzien van luchtdichte lasnaden 4, 5 en 6 en die aan één zijde 7 open is.
Volgens de uitvinding zijn de voornoemde kunststofvellen 2 en 3 ondoorschijnend en luchtondoorlatend. Bovendien zijn ze bij voorkeur soepel, voldoende dik en aldus enigszins scheurvast uitgevoerd.
Het is duidelijk dat de toegepaste kunststof bij voorkeur geschikt is voor het verpakken van eetwaar 8.
Opgemerkt wordt dat de kunststofvellen 2 en 3 bij voorkeur zijn vervaardigd uit een gekleurde kunststof, zodat verschillende soorten eetwaar 8 in een verschillend gekleurde verpakking 1 bewaard kunnen worden.
Het gebruik van de voornoemde verpakking 1 volgens de uitvinding is eenvoudig en als volgt.
De eetwaar 8, in dit geval een stuk rauw vlees of gevogelte, wordt op een hygiënische wijze tussen de voornoemde kunststofvellen 2 en 3, in de verpakking 1, aangebracht.
Vervolgens wordt de ruimte tussen de kunststofvellen 2 en 3, op bekende wijze, vacuüm of nagenoeg vacuüm gezogen en wordt de open zijde 7 van de verpakking 1 dichtgelast.
De aldus verpakte eetwaar 8 kan vervolgens in een koelcel of dergelijke worden bewaard.
Opgemerkt wordt dat de voornoemde kunststofvellen 2, 3 samengesteld kunnen zijn uit verschillende lagen, bijvoorbeeld een kunststoflaag die geschikt is om in contact te treden met de te verpakken eetwaar 8; een kunststoflaag
-die ondoorlaatbaar is voor lucht; een ondoorschijnende kunststoflaag en een kunststoflaag die de verpakking een zekere mechanische sterkte verleent.
Hierbij wordt opgemerkt dat de luchtondoorlatende en ondoorschijnende lagen kunnen worden vervangen door een metaalfolie, zoals bijvoorbeeld aluminiumfolie.
Indien de kunststoflaag, die geschikt is om in contact te treden met de eetwaar 8 niet geschikt is om onderling te worden gelast, kan aan de omtreksrand van de naar elkaar gekeerde zijden van de kunststofvellen 2 en 3 ook een bijkomende laag zijn voorzien die toelaat bij het aan elkaar lassen van deze omtreksranden luchtdichte lasnaden 4, 5 en 6 te verkrijgen.
Verder wordt opgemerkt dat de kunststofvellen 2, 3 niet noodzakelijk rechthoekig moeten zijn, maar om het even welke omtreksvorm kunnen vertonen.
Het is duidelijk dat de verpakking 1 volgens de uitvinding ook uit andere materialen kan worden vervaardigd dan soepele kunststofvellen 2, 3.
Inderdaad, ook kokers vervaardigd uit een stijve kunststof of uit aluminium kunnen worden aangewend voor het vervaardigen van een luchtdichte en ondoorschijnende verpakking.
Opgemerkt wordt dat de voornoemde verpakking eveneens kan vervaardigd zijn uit een materiaal dat rond de te verpakken eetwaar kan krimpen, alsmede uit een materiaal dat kookvast is.
De huidige uitvinding is geenszins beperkt tot de hierboven beschreven werkwijze en inrichting, doch een werkwijze volgens de uitvinding voor het verpakken van eetwaar en een verpakking daarbij toegepast kunnen volgens verscheidene varianten worden verwezenlijkt zonder buiten het kader van de uitvinding te treden.
Method for vacuum packaging of food and packaging applied thereby.
The present invention relates to a method for vacuum packaging of food products, in particular meat products.
It is known to package meat goods in an airtight manner in a bag made of a transparent plastic, the meat products being introduced into the bag, after which the air is sucked out of the bag, and after which the open side of the bag is finally sealed.
However, a disadvantage of this known method is that the meat product thus packaged undergoes an undesired color change and consequently becomes visually less attractive, which has a negative influence on the value of the meat product.
The object of the present invention is to provide a solution to the aforementioned and other disadvantages.
To this end, the invention relates to a method for packaging food, which essentially consists of arranging the food in a package; vacuuming or substantially vacuuming the space in the package; and airtight sealing of the package, wherein use is made of a package made of an opaque and air-impermeable material.
The present invention offers the advantage that during the packaging and storage thereof, the food surprisingly undergoes little or no color changes, so that the food optimally retains its value visually.
The present invention also relates to a package that can be used in the method described above and which essentially consists of a bag of an opaque and air-impermeable material.
With the insight to better demonstrate the characteristics of the present invention, a preferred method according to the invention for vacuum packaging of foodstuffs, as well as a packaging that can be used for this purpose, is described below with reference to the accompanying figures, in which:
Figure 1 represents a package according to the invention before use; figure 2 represents a package as in figure 1, in which food is vacuum packed.
Figure 1 shows a package 1 according to the invention which essentially consists of two plastic sheets 2, 3 placed against each other, which preferably have the same rectangular circumferential shape.
Both plastic sheets 2 and 3 are welded together along a part of their circumference to form a bag which is provided with airtight welding seams 4, 5 and 6 on a part of its peripheral edge and which is open on one side 7.
According to the invention, the aforementioned plastic sheets 2 and 3 are opaque and air-impermeable. Moreover, they are preferably flexible, sufficiently thick and thus somewhat tear-resistant.
It is clear that the plastic used is preferably suitable for packaging food products 8.
It is noted that the plastic sheets 2 and 3 are preferably made from a colored plastic, so that different types of food 8 can be stored in a differently colored package 1.
The use of the aforementioned package 1 according to the invention is simple and as follows.
The food 8, in this case a piece of raw meat or poultry, is placed in a package between the aforementioned plastic sheets 2 and 3 in a hygienic manner.
Subsequently, the space between the plastic sheets 2 and 3 is sucked in a known manner, vacuum or substantially vacuum, and the open side 7 of the package 1 is welded shut.
The food product 8 thus packaged can then be stored in a cold store or the like.
It is noted that the aforementioned plastic sheets 2, 3 can be composed of different layers, for example a plastic layer that is suitable for coming into contact with the food to be packaged 8; a plastic layer
-that is impermeable to air; an opaque plastic layer and a plastic layer that gives the package a certain mechanical strength.
It is noted here that the air-impermeable and opaque layers can be replaced by a metal foil, such as, for example, aluminum foil.
If the plastic layer which is suitable for contacting the food 8 is not suitable for mutual welding, an additional layer may also be provided on the peripheral edge of the sides of the plastic sheets 2 and 3 facing one another welding these peripheral edges together to obtain airtight weld seams 4, 5 and 6.
It is further noted that the plastic sheets 2, 3 need not necessarily be rectangular, but can have any circumferential shape.
It is clear that the package 1 according to the invention can also be manufactured from other materials than flexible plastic sheets 2, 3.
Indeed, tubes made from a rigid plastic or from aluminum can also be used to produce an airtight and opaque package.
It is noted that the aforementioned package can also be manufactured from a material that can shrink around the food to be packaged, as well as from a material that is boiling-resistant.
The present invention is by no means limited to the method and device described above, but a method according to the invention for packaging foodstuffs and a packaging used therewith can be realized according to various variants without departing from the scope of the invention.
