Abstract

1. Process to treat refrigerated milk to avoid development of psychrotrophic germs by nitrogen and carbon dioxide, characerized by that the two gases are introduced into the refrigerated milk regularly and sharply divided, the nitrogen being introduced in such a quantity that the maximum concentration of oxygen dissolved in the milk for treatment and during the stockage corresponds to 20 % of the quantity of oxygen dissolved of the milk saturated with air and carbon dioxide being introduced in such a quantity that the concentration of carbon dioxide dissolved in the milk for treatment and during the stockage corresponds to 30 to 70 % of the quantity of carbon dioxide dissolved in the milk with saturation of this gas, the carbon dioxid being introduced in higher quantity than the nitrogen.
