beträgt. Die Konservierung der Getränke bildet keine Schwierigkeiten, da den Getränkegrundlagen mit der Uracil-4-carbonsäure kein verderblicher Stoff zugesetzt wird. Die Getränke können wahlweise mit
Kohlensäure, eventuell bis zur Sättigung versetzt werden.
Verglichen mit dem erfindungsgemässen Verfahren geht bei den bekannten Verfahren der
Herstellung von Molken- und Molkenmischgetränken durch die verschiedenen Verfahrensschritte ein grosser Teil der gesundheitlich wertvollen Uracil-4-carbonsäure verloren, da sie infolge ihrer
Schwerlöslichkeit beim Konzentrieren der Molke, beim Auskristallisieren des Milchzuckers und
Entfernen der Milchsalze gemeinsam mit Proteinen, Milchzucker und Salzen ausfällt.
Das resultierende verwendungsfähige Konzentrat an Molke enthält dann nur einen geringen Gehalt an Uracil-4-carbonsäure. Die erfindungsgemäss hergestellten Getränke können hingegen auf einen Gehalt an
Uracil-4-carbonsäure eingestellt werden, welcher bei Molkenkonzentraten infolge der gleichzeitig mit der
Konzentration auftretenden Verdickung durch Restproteine und Proteinabbauprodukte aus der eigenen Uracil-4-carbonsäure nicht erreichbar ist.
Nach der Erfindung kann an Stelle oder gemeinsam mit der Uracil-4-carbonsäure (6-Carboxy-2,4-dihydroxypyrimidin) die Uracil-5-carbonsäure (5-Carboxy-2, 4-dihydroxypyrimidin) den
Getränkegrundlagen derart zugesetzt werden, dass die Gesamtkonzentration der verwendeten
Uracilcarbonsäuren 0, 1 bis 5 g/l Fertiggetränk beträgt. Vorteilhaft können weiters die erfindungsgemäss zuzusetzenden Uracilcarbonsäuren teilweise oder zur Gänze in Form ihrer organotropen Salze, vorzugsweise in Form ihrer Kalisalze zugesetzt werden. Als organotrope Salze werden solche Salze bezeichnet, welche für den menschlichen Organismus unschädlich sind, wie in diesem Fall z. B. die
Natrium-, Kalium-, Calcium-, Magnesiumsalze u.a., ferner solche, die durch eine Aminogruppe an die
Uracilcarbonsäuren gebunden sind, wie z.
B. die Salzverbindungen der Uracilcarbonsäuren mit
Aminosäuren. Die Verwendung der organotropen Salze der Uracilcarbonsäuren kann auch zur
Einstellung des pH-Wertes der erfindungsgemäss hergestellten Getränke dienen. Dies ist von besonderer
Bedeutung bei Fruchtsaftgrundlagen oder Getränkegrundlagen, welche Genusssäuren wie Zitronensäure, Milchsäure, Phosphorsäure oder andere enthalten und deren pH-Wert sehr niedrig ist. Der PH-Wert des
Fertiggetränkes wird auf 2, 5-6, vorzugsweise auf 3-4, eingestellt.
Nach der Erfindung können die erfmdungsgemäss zuzusetzenden Uracilcarbonsäuren teilweise oder zur Gänze in Form von Estern, vorzugsweise Saccharoseestern der Uracil4-carbonsäure bzw. der Uracil-5-carbonsäure den Getränkegrundlagen zugesetzt werden. Der Vorteil, der sich durch die Verwendung der erfmdungsgemäss anzuwendenden Saccharoseester der Uracilcarbonsäuren ergibt, besteht in der grösseren Löslichkeit dieser Ester im Vergleich zu den schwerlöslichen Uracil4- und - 5-carbonsäuren. Während bei 20 C für die Lösung eines Teiles Uracil4-carbonsäure 520 Teile Wasser erforderlich sind, benötigt man für die Lösung eines Teiles des Saccharosemonoesters der Uracil-4-carbonsäure nur 125 Teile Wasser.
Erfmdungsgemäss können die Uracil-4-carbonsäure, die Uracil-5-carbonsäure, deren organotropen Salze sowie die Ester dieser Säuren in den verschiedensten Gewichtsverhältnissen zueinander in der Gesamtkonzentration von 0, 1 bis 5 g, berechnet auf reine Uracil-4-carbonsäure, pro l Fertiggetränk den Getränkegrundlagen zugesetzt werden.
Die Verfahren zur Herstellung der Uracil-4-carbonsäure, der Uracil-5-carbonsäure, der organotropen Salze und Ester dieser Säuren bilden nicht Gegenstand dieser Erfindung.
Die erfindungsgemäss hergestellten Getränke können noch mit Kohlensäure bis zur Sättigung versetzt werden.
Die Beispiele illustrieren die Anwendung der Erfindung, ohne aber ihren Umfang zu beschränken.
Beispiel l : Zu 40 l Orangensaft und 5 l Zitronensaft werden 12 kg Zucker, 140 g Uracil-4-carbonsäure, 40 g Kalisalz der Uracil-4-carbonsäure, gelöst in 50 l Wasser, gegeben, filtriert und das fertige Getränk mit Kohlensäure gesättigt.
Beispiel 2 : Zu 8 kg Apfelsaftkonzentrat werden 9 kg Zucker, 100 g Uracil-5-carbonsäure, 60 g Saccharoseester der Uracil-5-carbonsäure, gelöst in 100 l Wasser, zugesetzt. Nach Sättigung mit Kohlensäure wird das fertige Getränk in Flaschen abgefüllt.
Beispiel 3 : Für ein Bitter-Tonic-Getränk werden 2, 5 kg Bitteraroma, welches unter der Markenbezeichnung "Naarden AC 40926" im Handel ist, 200 g Zitronensäure krist., 8 kg Zucker, 2 kg Sorbit, 100 g Uracil-5-carbonsäure, 20 g Kalisalz der Uracil4-carbonsäure und 30 g Saccharosemomoester der Uracil-4-carbonsäure in 100 l Wasser gelöst, mit Kohlensäure gesättigt und in Flaschen abgefüllt.
