Verfahren zur Herstellung von Kaffee-Extrakt.
Die Erfindung betrifft ein Verfahren zur Herstellung von Kaffee-Extrakt.
Es ist bereits bekannt, beispielsweise in einem einfachen Mayerhofer-Apparat Kaffeepulver, welches auf einem geeigneten Filter aufgebracht ist, mit siedendem Wasser zu übergiessen, wobei zur Erhöhung der Durehlaufgesehwindigkeit im Sammelgefäss unterhalb des Filters die Luft abgesaugt wird. Bei diesem Verfahren können leicht Aromastoffe durch Absaugen der Luft verloren gehen.
Es ist ferner bereits bekannt, Kaffee-Extrakt in der Weise herzustellen, dass im Gegenstrom Kaffeepulver mit Wasserdampf bzw. kochendem Wasser ausgelaugt wird. Dieser Extrakt wird im
Vakuum eingeengt. Letzteres Verfahren hat den Nachteil, dass sich bei der Auslaugung viel Dampf kondensiert und die Extraktbrühe dementsprechend im Vakuum nachträglich wieder eingedampft werden muss, wodurch ein Verlust an wertvollen Aromastoffen eintritt.
Es wurde nunmehr gefunden, dass diese Nachteile vermieden werden können, wenn Kaffeepulver mit einer der für die gewünschte Extraktkonzentration entsprechend bemessenen Wassermenge ausgelaugt wird. Es gelangt annähernd also nur jene Wassermenge zur Verwendung, welche im Extrakt verbleiben kann, so dass mithin ein späteres Abdampfen eines Teiles des zur Auslaugung verwendeten Wassers nicht notwendig wird. Die genügende Extraktion trotz Verwendung nur einer verhältnismässig kleinen Wassermenge kann durch Behandlung im Gegenstrom erzielt werden.
Die Bewegung des Wassers durch das auszulaugende Kaffeepulver hindurch wird erfindungsgemäss nicht durch Saugen, sondern unter Anwendung von unter Druck stehenden Schutzgasen bewirkt, wie beispielsweise mittels unter Druck stehender Kohlensäure oder Stickstoffs. Die Anwendung indifferenter Gase ist an sich in der Kaffeelaugerei bekannt und in einem Verfahren zur Herstellung fester Extrakte bereits vorgeschlagen worden. Hiedurch wird das Absaugen und ein mit dieser Operation verbundener Verlust an Aromastoffen vermieden. Überdies ist durch Verwendung solcher, unter Druck stehender Schutzgas ein Abschluss des Kaffeepulvers und des Extraktes und der in diesen enthaltenen feinen Aromastoffe von der Aussenluft bewirkt. Es hat sieh gezeigt, dass damit in erwünschter Weise eine sonst bemerkbare Beeinträchtigung dieser Aromastoffe vermieden wird.
Die benutzten, unter Druck stehenden Schutzgas können bei einer Ausführungsform der Erfindung im Kreislauf wieder verwendet werden, womit nach erfolgter Sättigung dieser Gase mit Aromastoffen ein weiterer Verlust an Aromastoffen vermieden wird.
Die Gase können zweckmässig unter einem Überdruck von einigen Zehntel Atmosphären verwendet werden, doch ist auch die Anwendung höheren Drucks in vorliegender Erfindung mit eingeschlossen. Die Abkühlung des Extraktes erfolgt zweckmässig ebenfalls unter einer Schicht der angeführten Gase. Ausser Kohlensäure und Stickstoff können selbstverständlich auch andere sauerstofffreie oder sauerstoffarme Schutzgase verwendet werden, welche die Aromastoffe des Kaffees nicht beeinträchtigen.
In der Zeichnung ist eine beispielsweise Ausführungsform einer Einrichtung ersichtlich, in welcher das erfindungsgemässe Verfahren durchgeführt werden kann.
Gefässe a-an stellen eine Anzahl von Diffuseuren dar. Bei b sind Anschlussstutzen an die Rohrleitung c vorgesehen, durch welche Heisswasser in die Diffuseure einfliesst. Diese sind des weiteren durch Rohrleitungen d verbunden, welche jeweils den vorangeschalteten mit dem nachfolgenden Diffuseur verbinden. Bei e ist eine Rückleitung vorgesehen, durch welche der Extrakt fliesst, wenn a1 mit einer frischen Füllung versehen wurde und der Extrakt aus an rückgeleitet wird in den frisch gefüllten Diffuseur a1. Am unteren Ende der Diffuseure sind Anschlussstutzen t vorhanden, welche die Ver-

bindung mit der Rohrleitung g herstellen, die den Extrakt in die Sammelbehälter hí und/ überführt, welche abwechselnd gefüllt werden.

Nachfolgend wird ein Ausführungsbeispiel für die Durchführung des Verfahrens angegeben : Ausführungsbeispiel : Je nach der gewünschten Stärke des Kaffee-Extraktes wird das Kaffee- pulver mit der entsprechend berechneten Menge auf 70-95 C erhitzten Wassers beschickt, u. zw. in der Weise, dass die Extraktionsflüssigkeit zuerst in den Diffuseur mit dem bereits am meisten extrahierten Gut, sodann in die Diffuseure mit dem immer weniger ausgelaugte Gut und zum Schlusse in den mit frischem Gut besehiekten Diffuseur gelangt. Die Apparate sind doppelwandig ausgebildet und entsprechend beheizt, so dass die Extraktionsflüssigkeit auf der angegebenen Temperatur gehalten wird.
Das Einbringen der Extraktionsflüssigkeit in die einzelnen Zylinder erfolgt je nach der gewünschten Umlaufgeschwindigkeit unter einem Gasdruck von 0'2 bis0'5 atil. Während des Extraktionsvorganges stehen die Zylinder und Leitungen unter einer Kohlensäure-oder Stichstoffatmosphäre.
Zu diesem Zweck sind die einzelnen Diffuseure mit entsprechenden Rohrleitungen und Hähnen versehen, welche es ermöglichen, jeweils das Gas von dem Zentralgasbehälter auf die einzelnen Apparate einzuschalten und das einströmende Gas auf die in diesen Apparaten befindliche Flüssigkeit zum Zwecke des Flüssigkeitstransportes einwirken zu lassen.
Nach erfolgtem Durchfluss durch alle Zylinder wird die betreffende Charge in den Sammelbehälter geleitet, von wo der Extrakt unter Luftabschluss bzw. unter Kohlensäurestrom ohne Eindickung zur Abfüllung gelangt. Das Füllen kann mit an sich bekannten Abfüllapparaten vorgenommen werden, wie solche Apparate auch zum Abfüllen alkoholfreier Getränke verwendet werden.
Durch vorliegende Erfindung wird die Herstellung von Kaffee-Extrakt in verhältnismässig einfachen Apparaten in sehr wirtschaftlicher Weise und mit gutem Erfolg hinsichtlich der Güte des hergestellten Kaffee-Extraktes ermöglicht.

1. Verfahren zur Herstellung von Kaffee-Extrakt, dadurch gekennzeichnet, dass Kaffeepulver nur mit einer bemessenen Wassermenge im Gegenstrom behandelt wird, die dem Wassergehalt des fertigen Extraktes annähernd entspricht.

It is already known, for example in a simple Mayerhofer apparatus, to pour boiling water over coffee powder which is applied to a suitable filter, the air being sucked off to increase the flow rate in the collecting vessel below the filter. With this process, aromas can easily be lost by sucking out the air.
It is also already known to produce coffee extract in such a way that coffee powder is leached in countercurrent with steam or boiling water. This extract is in the
Reduced vacuum. The latter process has the disadvantage that a lot of steam condenses during the leaching process and the extract broth must accordingly be subsequently evaporated again in a vacuum, which leads to a loss of valuable aromatic substances.
It has now been found that these disadvantages can be avoided if coffee powder is leached with an amount of water appropriately sized for the desired extract concentration. Almost only that amount of water is used that can remain in the extract, so that later evaporation of part of the water used for leaching is not necessary. Sufficient extraction despite the use of only a relatively small amount of water can be achieved by treatment in countercurrent.
According to the invention, the movement of the water through the coffee powder to be leached is not brought about by suction, but by using pressurized protective gases, such as, for example, pressurized carbonic acid or nitrogen. The use of inert gases is known per se in coffee leaching and has already been proposed in a process for the production of solid extracts. This avoids suction and the loss of flavoring associated with this operation. In addition, the use of such pressurized protective gas results in the coffee powder and the extract and the fine aromatic substances contained in them being sealed off from the outside air. It has shown that an otherwise noticeable impairment of these flavoring substances is avoided in the desired manner.
In one embodiment of the invention, the pressurized protective gas used can be reused in the circuit, so that after these gases have been saturated with aroma substances, a further loss of aroma substances is avoided.
The gases can conveniently be used under an overpressure of a few tenths of an atmosphere, but the use of higher pressure is also included in the present invention. The extract is also expediently cooled under a layer of the gases listed. In addition to carbonic acid and nitrogen, other oxygen-free or low-oxygen protective gases can of course also be used, which do not impair the aroma of the coffee.
