Un concentrado salado de aceite continuo que comprende: entre 24% y 85% en peso de materia grasa en peso del total del concentrado, en donde dicha materia grasa presenta un contenido de materia grasa sólida a 20ºC (N₂₀) de al menos 2% en peso (la materia grasa sólida es expresada en porcentaje en peso de la cantidad total de materia grasa presente en el concentrado salado); entre 8% y 50% en peso de agua del total del concentrado; entre 0,1 % y 20% en peso de agente estructurante de agua en peso de la cantidad de agua presente en el concentrado; entre 0,2 mol y 3 mol por cada 100 g de agua de catión de metal alcalino seleccionado entre Na⁺, K⁺ y sus combinaciones; entre 0,2 mol y 3 mol de anión de cloruro por cada 100 g de agua; en donde la materia grasa y el agua se encuentran presentes en una relación peso / peso entre materia grasa y agua de al menos 2:3, de preferencia de al menos 3:4. El concentrado salado de la presente puede ser usado, de forma adecuada, como base para preparar, por ejemplo, sopas y salsas.
