Abstract
Proceso para prolongar la vida útil de productos azucarados conservando las propiedades naturales de los mismos. En particular, se refiere a un proceso aplicado al producto azucarado envasado para reducir microorganismos causantes de la fermentación y retardar así la cristalización, manteniendo al mismo tiempo inalterables los parámetros de calidad del producto y sus propiedades naturales. Asimismo, se refiere a un aparato que permite llevar a cabo el proceso de la misma. Reivindicación 1: Proceso para prolongar la vida útil de productos azucarados envasados herméticamente luego de la etapa de fraccionamiento y conservar las propiedades naturales de los mismos, caracterizado por comprender los pasos de: (i) aplicar calor de forma uniforme a dichos envases que contienen el producto azucarado, dispuestos de forma vertical, durante un período de tiempo comprendido entre 15 y 50 minutos hasta que el producto azucarado alcance una temperatura comprendida entre 60 y 78ºC; (ii) mantener dicha temperatura durante al menos un tiempo comprendido entre 3 y 10 minutos, de manera tal que se produzca vacío en los envases; y (iii) dejar enfriar hasta llegar a la temperatura ambiente.Process to prolong the shelf life of sugary products while preserving their natural properties.
