Abstract

Un método para la reducción de la contaminación bacteriana sobre la superficie de un alimento. El método comprende la aplicación, a la superficie del alimento, de un péptido y una metilcelulosa. La metilcelulosa tiene unidades de anhidroglucosa unidas por 1 - 4 uniones, donde los grupos hidroxi de las unidades de anhidroglucosa están sustituidos con grupos metilo de modo tal que s23/s26 es 0.36 o menos, donde s23 es la fracción molar de unidades de anhidroglucosa donde solo los dos grupos hidroxi en las posiciones 2 y 3 de la unidad de anhidroglucosa están sustituidos con grupos metilo; y donde s26 es la fracción molar de unidades de anhidroglucosa donde solo los dos grupos hidroxi en las posiciones 2 y 6 de la unidad de anhidroglucosa están sustituidos con grupos metilo. Reivindicación 2: El método de la reivindicación 1, en el cual la superficie del alimento es un cadáver de animal a una temperatura de 30 a 40ºC.
