Un producto a base de té. Más particularmente, se refiere a un producto a base de té en hojas con mejoras en cuanto a la cantidad de teaflavinas y catequinas. El problema que aborda consiste en proporcionar un producto a base de té con cantidad significativa de catequinas sin agregar catequina exógena alguna; en donde el producto a base de té tiene propiedades sensoriales similares a las del té negro. En vista de lo anterior, constituye un objeto de la presente proveer un producto a base de té con niveles significativos tanto de catequinas como de teaflavinas. Se observo que llevar a cabo la congelación en las hojas de té frescas después de la recolección, seguido por exponerlas al aire y secarlas, genera un producto a base de té en hojas que tiene una cantidad significativa de catequinas, con propiedades sensoriales similares a las del té negro.A tea based product.
