Abstract
Métodos de preparacion de productos lácteos que incluyen almidones modificados mediante reaccion con anhídrido n-octenil succínico (nOSA). Parcialmente o la totalidad las grasas o lípidos en las productos lácteos pueden ser sustituidos por el almidon modificado.
