Abstract
El producto se obtiene mediante la depuración (separando la paja y otros granos mediante el zarandeo soplado), la selección (separando el grano que no está en buenas condiciones mediante inmersión en agua corriente) y el tostado (en tostadorarotativa movida por un motor y quemadores de gas para la energía calórica que oscila entre los 0°C y los 120°C) de granos completos de trigo, hasta lograr el "punto café"; esto es, hasta que el tostado (y el molido posterior) le otorga al grano detrigo las propiedades adecuadas como para que, al someterlo a la acción del agua caliente, resulte una infusión con características organolépticas - color, sabor y aroma - similares a las del café.
