Abstract

Cepas de Streptococcus thermophilus que muestran resistencia a fagos depositadas en BCCM/LMG(Gent/Belgium) P-18383 y P-18384. Una molécula de ácido nucleico aislada de estas cepas tiene la secuencia SEQ ID NO 1. El plásmido aislado de estas cepas, una secuencia de gen incluida en los plásmidos que codifica una proteína de un sistema de resistencia a fagos. El plásmido puede ser introducido en otros microorganismos huéspedes por técnicas convencionales, tal como transferencia conjugativa y transformacion. Además de Streptococcus thermophilus, el huésped puede ser Bacillus subtilis o Escherichia coli, o preferiblemente Lactobacillus lactis. Estos microorganismos que contienen plásmidos son particularmente utiles en la produccion de derivados de la leche, tales como leches fermentadas y quesos, y un método para conferir resistencia a fagos a cultivos de microorganismos. Ellos son utilizados como cultivos iniciadores que comprenden una unica o multiples cepas.
