Abstract
Tanque de contencion prolongada continua con un tiempo de resistencia variable y procedimiento para fabricar queso mediante dicho tanque. Esta invencion serefiere a un montanje (10) de un tanque de contencion aislado (15), con un compartimiento interior (40), dentro de un compartimiento exterior (20), un montajede cobertura (30) y un montaje de sostén (19). El compartimiento exterior (20) se mantiene verticalmente e incluye un fondo levemente inclinado(21), quefacilita el drenaje del líquido contenido en su interior. Este tanque (10) es empleado en un procedimiento para fabricar queso en el que la leche en flujocontinua es calientada a una temperatura entre 75 y 85sC, luego su temperatura bajada a entre 38 y 48sC y a continuacion coaguladamediante un agentecoagulante. El cuajo resultante queda en condiciones de ser cortado, agregar calcio, colar y moldear a determinada temperatura.Long-term continuous tank with a variable resistance time and procedure for making cheese using said tank. This invention refers to a mounting (10) of an insulated containment tank (15), with an inner compartment (40), inside an outer compartment (20), a cover assembly (30) and a support assembly (19) . The outer compartment (20) is held vertically and includes a slightly inclined bottom (21), which facilitates the drainage of the liquid contained inside. This tank (10) is used in a process to make cheese in which the milk in continuous flow is heated to a temperature between 75 and 85sC, then its temperature dropped to between 38 and 48sC and then coagulated by a coagulating agent. The resulting rennet is able to be cut, add calcium, strain and mold at a certain temperature.
