Abstract
1474629 Food pieces UNCLE BENS OF AUSTRALIA PTY Ltd 7 Aug 1974 [7 Aug 1973] 34742/74 Heading A2B Discrete, shape retaining food pieces are made by forming a finely divided mix or emulsion containing animal and/or vegetable proteinaceous materials and a water soluble alginate, forming the mix into the shaped pieces and subsequently treating the pieces with an aqueous solution of a water soluble calcium salt. Preferably a water insoluble calcium salt is included in the mix and the calcium salt solution contains an edible acid. Additionally a sparingly soluble calcium salt is also included in the mix. Preferred substances are calcium sulphate or citrate as the sparingly soluble salt, calcium phosphate as the insoluble salt, mixed with sodium alginate and treated with a solution of calcium chloride and citric acid.
