A SYSTEM THAT DISCHARGES THE HARMFUL PARTICLES IN THE FRYING OIL IN THE DEEP FRYER WITHIN SECONDS DURING COOKING
Technical Field
The invention relates to a discharge system that ensures the removal of particles (bread crumbs, corn flour, etc.) formed in the hot oil during cooking of foods fried in the deep fryer, delays the oxidation, polymerization and thermal degradation reactions that may occur in the oil and ensures the long-term use of the oil.
Known State of the Art
Oils get subjected to various disruptive factors such as high temperature, humidity, air, oxygen and heavy metals during the frying process. Especially after the thermal oxidation event, components that may harm health such as hydroperoxide, aldehyde, ketone and hydrocarbons can form in the environment. The physical or chemical reactions that may occur cause the undesirable taste-aroma, smell and textural properties to pass from the oil to the fried food. Further, it can cause the release of some oxidized volatile components such as free radicals, trans-fatty acids, acrolein, alpha and beta-unsaturated aldehydes, which have harmful effects on health.
As is public knowledge, the quality and use of frying oil is of great importance in the food sector and especially in the fast food sector. The brand of the oil, the boiling point of the fryer and the freshness of the oil are among the most important issues that businesses should pay attention to in the sector regarding both the taste and the healthfulness of the fried food.
The frying oil boils at a certain temperature throughout the day in the deep fryer, during this period the particles of the cooked products (pepper seeds, bread crumbs, corn flour, chips particles, fish particles) are fried even after the product is removed and cause the particles to burn. These particles are dispersed into the oil for hours, darkening the color of the oil and disrupting the thermal balance of the oil, becoming an oil with a carcinogenic risk that is harmful to health and not considered appropriate by the regulation. In such cases, the audited companies are reluctantly subjected to serious fines and suffer serious economic damages. If these enterprises comply with the rules of the Food Regulation, they increase their oil consumption by disposing of frying oil after 1-2 frying processes and thus their economic expenses increase.
As a result, the existence of the above problems and the inadequacy of the existing solutions required an improvement to be made in the relevant technical field.
Objective of the Invention
The present invention relates to a method that eliminates the disadvantages mentioned above and provides new advantages to the relevant technical field, which provides for the discharge of the particles (bread crumbs, corn flour, etc.) formed in the hot oil during foods fried in the deep fryer.
The main objective of the invention is to separate particles such as bread crumbs and corn flour that poured into the oil during the cooking of the food cooked in the hot oil in the deep fryer, by recirculating the hot oil in the closed system and to separate these particles from the hot oil and to keep the oil in the deep fryer chamber clean continuously and a system has been developed that allows the oil to be used for a long time and without darkening.

In order to achieve all the objectives and features mentioned above and those that can be derived from the detailed description, the invention relates to a discharge system that ensures the removal of particles (bread crumbs, corn flour, etc.) formed in the hot oil during cooking of foods fried in the deep fryer, delays the oxidation, polymerization and thermal degradation reactions that may occur in the oil and ensures the long-term use of the oil. The invention is characterized as comprising the following:
• A switch that starts the operation of the system,
• A PLC display that controls the operation of the deep fryer and the system
• A circulation pump that provides the circulation of hot oil in deep fryer,
• A vibro motor that makes the collected particles in the hot oil vibrate, moves them forward and makes them fall into the particle collection basket
• An upper basket that separates the particles in the hot oil from the hot oil during recirculation,
• A cascade plate, that sends the clean oil separated from the particles during recirculation back into the deep fryer
• A particle collection basket in which the discharged particles are collected,
• A spherical valve and drain hose, which provide draining of the oil in the deep fryer at the end of the day,
• An on-off button that allows the circulation pump to start or stop
• An on-off button that allows the vibro motor start or stop,
• A heater resistor that heats the oil in the deep fryer
• Switch arm that makes the switch operate.

Detailed Description of Invention
This detailed description describes the preferred alternatives of the clean air unit, which is the subject of the invention, only for a better understanding of the subject and without causing any limiting effect.
The invention comprises deep fryer body (1), deep fryer basket (2), switch arm (3), servo driver (4), drain hose (5), servo motor (6), coupling (7), PLC screen (8), motor connection plate (9), circulation pump (10), check valve (11), circulation pump on-off button (12), vibration motor on- off button (13), manual operation button (14), hose sleeve (15), spherical valve (16), vibration motor (17), wedge (18), plate(19) insulation plate (20) cascade plate (21), switch (22), sifting basket (23), particle pouring pan (24), particle container (25), resistor (26), grill plate (27), frying chamber (28), circulation pipes (29) and vibration arms (30).
The system of the invention is a method that can be applied to all kinds of industrial and household deep fryers, and in general terms, the particles that fall from the food cooked in the hot oil taken from the frying chamber (28) section of the deep fryer are discharge from the hot oil and sends the oil back to the frying chamber (28). The principle of operation of the deep fryer and the system of the invention is as follows; The frying chamber of the deep fryer (28) is filled with desired amount of oil. After activating the resistor (26) from the PLC screen (8), the oil is raised to the desired temperature on the PLC screen (8). Then the food to be cooked is placed in the deep fryer basket (2) and immersed in the frying chamber. In the meantime, particles such as bread crumbs, corn flour, etc. on the food begin to fall into the hot oil. With the triggering of the switch arm (3) of the deep fryer basket (2) of our system, which is the subject of the invention, the servo motor (6) and the circulation pump (10) to which it is connected, the vibration motor (17) starts to run synchronously by means of the switch
(22) to which it is connected. The circulation pipes (29) connected to the circulation pump (10), which starts to run, begin to absorb the hot oil from the frying chamber (28). The drawn hot oil is poured into the sifting basket (23) by means of the circulation pipes (29). The sieve on the bottom of the sifting basket (23) sieves the particles in the incoming hot oil with particulates, allowing the hot oil to return to the frying chamber (28) over the cascade plate (21 ). Sifting basket (23) makes vibration movements due to the fact that it is connected to the vibration arms (30) and the vibration motor (17). In this way, the particles collected on the sifting basket (23) are moved as a result of vibration, and they are poured from the particle pouring pan (24) on the sides of the sifting basket
(23) and filled into the particle containers (25). In this way, the particles in the hot oil are discharged. Because the system of the invention is a closed system, it always performs the same discharge process. The mesh of the sieve wire on the sifting basket (23) can be made in the desired size. Thus, regardless of the food cooked in the deep fryer, the particles formed are purified from the hot oil. The oils remaining in the pulp particles poured into the particle containers (25) can be filtered and used again in the deep fryer.
The oil in the frying chamber (28) of the deep fryer can be drained at the end of the day by turning the spherical valve (16) 90 degrees after the frying process is finished and then attaching the drain hose (5) to the hose sleeve (15) with which it is connected. This draining process is done in a short time with the help of circulation pump (10). The spherical valve (16) is turned back to its former position and returned to particle removal system.
The circulation pump on/off switch (12) on the deep fryer can manually switch the circulation pump off and on, depending on the user's request. Likewise, the vibration motor on/off switch (13) manually turns the vibration motor (17) on and off. A system that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; deep fryer body (1 ), deep fryer basket (2), switch arm (3), servo driver (4), drain hose (5), servo motor (6), coupling (7), PLC screen (8), motor connection plate (9), circulation pump (10), check valve (11), circulation pump on-off button (12), vibration motor on-off button (13), manual operation button (14), hose sleeve (15), spherical valve (16), vibration motor (17), wedge (18), plate(19) insulation plate (20) cascade plate (21), switch (22), sifting basket (23), particle pouring pan (24), particle container (25), resistor (26), grill plate (27), frying chamber (28), circulation pipes (29) and vibration arms (30).

The system that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; a system that separates the particles such as bread crumbs and corn flour that fall into the oil during the cooking of the food cooked in the hot oil in the deep fryer from the hot oil by recirculating the hot oil in the closed system, ensures that clean oil is always present in the deep fryer chamber (28), thus allows the oil to be used for a long time and without being blackened.
3. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; a circulation pump (10) that circulated the hot oil in the closed system.
4. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; a vibration motor (17) that vibrates the sifting basket (23), thus cleaning the discharging particles from the deep fryer.
5. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; a switch (22) and a switch arm (2) that supply the initial electrical signal to the system and make it operate automatically.
6. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; a spherical valve (16) and a drain hose (1), which ensure that the oil in the deep fryer is discharged to the outside with the help of the circulation pump (10) at the end of the day.
7. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; a PLC screen (8) that controls all processes of the deep fryer electronically.
8. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; circulation pump on-off button (12) that allows manual operation of the circulation pump (10) in line with the user’s desire.
9. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; vibration motor on-off button (13) that allows manual operation of the vibration motor (17) in line with the user’s request.
10. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking characterized by comprising; a manual operation button (14) that deactivates the switch (22) to operate the deep fryer line with the user’s request.
11. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; a cascade plate (21) that routes the hot oil cleaned from the particles back to the frying chamber (28).
12. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; a sifting basket (23) that separates the incoming hot oil from the particles with the vibration motion it receives from the vibration motor (17), directs the separated particles to the particle pouring pan (24) with the effect of the vibration, prevents the particles entirely and sends hot oil without particles to the frying chamber (28).
13. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; a particle pouring pan (24) that discharges the particles coming from the sifting basket (23) to outside with vibration.
14. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking, characterized by comprising; a particle containers (25) where degreased particles are poured.
15. The system according to claim 1 that discharges the harmful particles in the hot frying oil in the deep fryer within seconds during cooking characterized by comprising; a vibration arms (30) that transfer the vibration motion of the vibration motor (17) to the sifting basket.
