Abstract

A mold for making fresh filled pasta, in particular for making ravioli, comprising a frame (20), which includes a shaped body (8) fixed to a lid (9) by means of fixing means. A smooth roller (7) and a forming roller (11) are mounted on the frame (20); the rollers have a cylindrical shape and vertical and parallel rotation axes and are motorized and connected to each other through a series of mechanical transmissions mounted on the frame (20). The forming roller (11) is coupled to a pin (10) and has a shaped head (21) that is self-centered to the body (8) and to the cover (9) of the frame (20), by means of a screw (16) passing through an opening of the cover (9) which allows the head (21) to be locked inside a shaped seat (50) of the pin (10).

Description

MOLD FOR THE PRODUCTION OF FRESH STUFFED PASTA
The present invention generally relates to a mold for making filled fresh pasta and, in particular, for making ravioli.
The invention refers to the field of food machines for making fresh pasta and, in particular, for making filled fresh pasta, such as ravioli, agnolotti, tortellini, etc., and, specifically, it relates to the machine part which receives the dough and the filling and, through suitable formers, cutting blades and folding elements, is able to create the desired shapes of pasta. Machines for making fresh filled pasta are well known; they generally work a U-folded sheet, inside which the filling is inserted, and then move on the sheet to the following stages of forming, folding and cutting the sheet by means of respective and different components.
Compact structure molds are also known for making filled pasta and, in particular, for making ravioli, in which the various components, such as molders, cutting blades, maintenance wheels and folding elements, which are sequentially arranged, are mounted on a single frame and controlled by a single motorized drive.
The above mentioned molds can be mounted inside a ravioli machine or placed autonomously downstream of the kneading machine and/or the dough sheeter machine, so as to easily assemble the mold and to simplify the format change operations.
Said compact structure molds substantially have two forming rollers which rotate in a mirror way.
The sheet, already folded into a U shape and containing a filling dough, passes through the two rollers in order to take the desired shape and, subsequently, is closed and cut by means of special blades for finally making the single types of pasta (ravioli, agnolotti, tortellini, etc.).
However, the known solutions provide that a specific mold assembly is used for each form of desired pasta and for each type of ravioli, agnolotti, tortellini, etc., with negative consequences in terms of processing times and production costs and storage.
The object of the present invention is therefore to overcome the drawbacks mentioned above and, in particular, to provide a mold for making filled fresh pasta, which allows to avoid the replacement of more components in case it is necessary to vary the shape of the pasta.
Another object of the present invention is to provide a mold for making filled fresh pasta, which is compact, extremely flexible, efficient and functional.
A further object of the present invention is to provide a mold for making filled fresh pasta, which allows to obtain a simplified and a quick processing at low costs, with respect to the prior art.
These and other objects, according to the present invention, are achieved by realizing a mold for making filled fresh pasta, according to the attached claim 1.
Other detailed features are described in the subsequent dependent claims.
Further characteristics and advantages of the mold for making fresh filled pasta, according to the present invention, will become more clear from the following description, relating to an exemplary and preferred but not limiting embodiment of the mold of the present invention, with reference to the attached drawings, in which:

With reference to the above mentioned figures, the mold for making filled fresh pasta, according to the present invention, has a series of mechanical components assembled on a single frame 20, which is substantially formed by a shaped body 8 fixed to a lid 9 by means of fixing elements. The frame 20 supports the standing and advancement belt of the pasta sheet (not shown in the figures), as well as all the rotating and fixed elements that are necessary for forming, folding and cutting the pasta.
On the frame 20 there are mounted at least one smooth roller 7, possibly equipped with scraping elements 4, 6, and at least one forming roller 1 1. The scraping elements 4, 6 are composed of respective folded sheets that simplify exiting the pasta and that are fixed to the roller 7 by means of respective fixing elements.
The smooth roller 7 has a substantially cylindrical shape and is assembled inside the frame 20 by means of one or more bearings, a stop ring and a gear, which allow it to be moved; the bearings, the ring and the gear are housed inside a first seat of the body 8.
Furthermore, the smooth roller 7 has a cylindrical upper end 25 having a smaller diameter than the diameter of the roller 7, which protrudes from the cover 9.
The forming roller 1 1 , which has a substantially cylindrical shape, is assembled inside the frame 20 by means of one or more bearings, a stop ring and a gear 14, which allow its movement; the bearings, the ring and the gear are all housed inside a second seat of the body 8 which is adjacent to the above mentioned first seat.
The smooth roller 7 and the forming roller 1 1 have vertical and parallel rotation axes and they are driven by a single motor and connected by a series of mechanical transmissions mounted on the frame 20, thus guaranteeing a complete synchronization.
The forming roller 1 1 is a motorized drum which has a smooth part and a machined lower end, where a series of pockets with constant pitch are obtained, said pockets having a shape suitable for making the desired type of filled pasta.
According to the present invention, in particular, the forming roller 1 1 is inserted on a pin 10 and, in turn, is provided with a shaped head 21 and inserted inside the second seat of the body 8.
Advantageously, in the body of the pin 10 there is a seat 50 (visible in detail in figure 3B) adapted to engage with the shaped head 21 of the forming roller 1 1 ; the seat 50 and the roller 1 1 respectively have conjugated profiles 51 and 52, which are flared at 45° and which make it possible to easily couple the two components, for example even without a direct view of the seat 50.
In particular, the substantially oval shape of the head 21 , which is inserted in the seat 50 of the pin 10, allows to speed up the operations of insertion and replacement of the roller 11 , also thanks to the traction which occurs in correspondence with the shaped faces of the head 21 and of the conjugated profiles 51 , 52, respectively of the seat 50 and of the shaped head 21.
Furthermore, the pin 10 is fixed to the body 8 and to the cover 9 by means of a fixing system which comprises a central screw 16 passing through an opening of the cover 9, on which a stop knob 19 is mounted, said knob 19 coming out from the upper surface of the cover 9.
In this way, the use of a self-centering pin 10, thanks to the conjugated profiles 51 , 52 of the seat 50 and of the head 21 and together with the use of a central screw 16 with a stop knob 19 to support the forming roller 1 1 , allows, using a single assembly which constitutes the frame 20 of the mold, to carry out a quick replacement of the above mentioned forming roller 1 1 , so as to make various types and shapes of filled pasta, simply by removing the fixing elements consisting of the screw 16 and the knob 19.
It has thus been found that the solution object of the present invention allows to achieve the set objectives and, in particular, allows to obtain a plain utility in terms of comfort, simplicity and rapidity of operation, as well as flexibility of use and savings in making the mold and in managing the spare parts in a warehouse, simply by providing an interchangeable forming roller.
Therefore, the characteristics of the mold for making fresh filled pasta, which is the object of the present invention, are clear from the above description, as well as the advantages are also clear.
Finally, it is clear that numerous variations can be made to the mold of the invention, without thereby departing from the novelty principles inherent in the inventive idea which is the object of the appended claims, just as it is clear that, in the practical implementation of the invention, materials, shapes and dimensions of the shown technical details may be any according to requirements and the same may be replaced with other technically equivalent ones.
For example, the mold which is the object of the present invention can be integrated inside a ravioli machine and it can also be positioned downstream of a ravioli machine while maintaining its independent support structure.
Furthermore, the mold can also be made without connecting all its components to the same frame, so that the rotating and fixed elements necessary for forming, folding and cutting the filled pasta are parts of the same machine without necessarily having a common support structure and each of them can be mounted independently of the other, provided that the sequence and synchronization of work is guaranteed.
Finally, the positioning of the mold, which has been described as vertical in the above mentioned embodiment, can vary without leaving the scope of protection required in the attached claims.

Claims

1. Mold for making filled fresh pasta, comprising a frame (20), which includes a shaped body (8) fixed to a cover (9) by means of fixing means, on said frame (20) being mounted at least one smooth roller (7) and at least one forming roller (1 1 ), said rollers (7, 1 1 ) having a substantially cylindrical shape and vertical and parallel rotating axes, said rollers (7, 1 1 ) being also motorized and being connected to each other by a plurality of mounted mechanical transmissions which are mounted on said frame (20), said forming roller (11 ) also having a smooth portion and a shaped bottom end where a series of pockets are obtained with a shape suitable for making different type of pasta, characterized in that said forming roller (1 1 ) is coupled to a pin (10) which receives a shaped head (21 ) of said forming roller (1 1 ), said pin (10) being fixed to said body (8) and to said cover (9) by means of a screw (16) passing through a first opening of said cover (9), a stop knob (19) which protrudes above said cover (9) being mounted on said screw (16).

Mold according to claim 1 , characterized in that said forming roller (1 1 ) is assembled inside said frame (20) and is moved by means of a series of first bearings, a first stop ring and a first gear, said first bearings, said first stop ring and said first gear being housed inside a first seat of said body (8) of the frame (20).

Mold according to claim 2, characterized in that said smooth roller (7) is assembled inside said frame (20) and is moved by means of a series of second bearings, a second stop ring and a second gear, said second bearings, said second stop ring and said second gear being housed inside a second seat of said body (8) of the frame (20), said second seat being adjacent to said first seat.

Mold according to at least one of the previous claims, characterized in that said smooth roller (7) has a cylindrical upper end (25) with a diameter which is shorter than the diameter of the roller (7), said end (25) being configured to exit from said cover (9) of the frame (20) through a second opening of said cover (9).
5. Mold according to at least one of the claims from 2 to 4, characterized in that said pin (10) is inserted inside said first seat of said body (8) of the frame (20).
6. Mold according to at least one of the previous claims, characterized in that said shaped head (21 ) is placed inside a seat (50) of said pin (10).
7. Mold according to claim 6, characterized in that said seat (50) and said head (21 ) have conjugated and flared profiles (51 , 52), so that a self centering coupling between said head (21 ) and said seat (50) is obtained.
8. Mold according to at least one of the previous claims, characterized in that said head (21 ) has a substantially oval-shaped profile.
9. Mold according to at least one of the previous claims, characterized in that scraping elements (4, 6) are fixed to said smooth roller (7), said scraping elements (4, 6) being composed of folded sheets which allow exiting said pasta from the mold.
