Description

SELF-PRESSING MULTIPLE CHEESE HOOP MOLD
TECHNICAL FIELD
The present invention relates to a self-pressing multiple cheese hoop mold that allows performing cheese molding in standard measurements pertinent to hygienic conditions in cheese production, that allows the stacking of hoop molds in desired numbers, and that provides assistance in the filtration process of cheese through the pressure it applies.
PRIOR ART
Self-pressing white cheese production which is the subject matter of this invention initially starts with cooking of milk in small stainless vats and proceeds with the fermenting of milk by cooling it down to the fermentation temperature. Fermented and curdled cheese is then broken into small crumbs by means of being subjected to curd crushing and stirring processes. Subsequently, the filtration process is commenced by transferring the cheese to cheesecloths having radius corners and elliptical bases and ropes for the purpose of tying these cloths and by placing certain amounts of weights thereon after the said ropes are tied up as so the cheese that is broken into small crumbs will assume the desired visual shape. After the process of pressing, cheese of which water is extracted are separated from cheesecloths and immersed into brine and the maturation process is commenced. However in this production system, since processes such as fermenting inside vats, transferring to cheesecloths without weighing, continue pressing regardless of hygiene rules of unknown origin, the fact that cheesecloths used for the water extraction from cheese are required to be washed properly before production and have to be washed again under hygienic conditions after the use do not comply with standard hygiene conditions, it affects human health adversely.
Furthermore, a standard weight in grams cannot be achieved for curdled cheese placed inside cheesecloths without being properly weighted. Following the production process, cheese blocks are placed inside packaging of square shape and brought into the use of consumers. Since a standard measurement in terms of width and length cannot be performed, a gap occurs in lower molds during packaging and thus cheese breaks into small crumbs even in minor shocks.
BRIEF DESCRIPTION OF THE INVENTION
As in the utility model bearing the number of 2014/01463 which is an improved version of the patent document bearing the number of 2009/05403 of our company, labor costs are reduced in production with cheesecloth and convenience in terms of standard shape, weight in grams and packaging is provided by means of performing certain improvements on the plastic cheese filtration mold.
Lower mold bases located in hoop molds disclosed in the patent document bearing the number of 2014/01463 are not perforated. Distinctive design of the self-pressing white cheese was adapted to other types of cheese by means of altering the shape of the lower mold disclosed in the patent document numbered 2014/01463.
In order to eliminate the problems mentioned in the prior art, production of the self pressing white cheese has been facilitated by means of changes performed on our utility model bearing the number of 2014/01463.
Lower cheesecloth mold that allows the filtration of cheese placed inside the lower hoop mold disclosed in the patent document bearing the number of 2014/01463 and that allows the cheese to assume the shape of a pattern, performs the filtration process through the inner cheesecloth of the lid and further performs the cheese pressing process by applying pressure through a plurality of hoop molds placed for the purpose of stacking on the lid that is placed on the cheesecloth lid.
Centering gap disclosed in the utility model bearing the number of 2014/01463 has also been modified with the intention of enabling the lid to apply pressure at a certain intensity by means of adding locking function to the centering gap thus ?
WO 2020/117133 PCT/TR2018/000117 allowing it to apply pressure to all multiple hoop molds at a certain intensity. By means of this function, length spacing of the stacking gap is also shortened. By this means, applying excessive pressure to the cheese is prevented and obtaining of cheese in the desired standards per liter of milk is aimed.
5
By means of the multiple self-pressing white cheese hoop mold that we designed in order to substitute for cheesecloths, cheese can be fermented inside stainless vats and can be cut into portions and mold production without any contact can be commenced by means of transferring curdled cheese into multiple hoop mold 10 instead of cheesecloth through the assistance of multiple filling guide.

30 DISCLOSURE OF THE INVENTION
Our invention comprises the parts of lower hoop mold (1) which is made from plastic, lower hoop mold inner cheesecloth (4), lid inner cheesecloth (5), lid (6), long side of the frame (7), short side of the frame (8) and centering pin (9).
Our invention can be utilized by superimposing the lower hoop mold (1), lower hoop mold inner cheesecloth (4) which is placed inside the lower hoop mold (1), lid inner cheesecloth (5) and the lid (6). Cheese filtering hole (3) located on the lower hoop mold (1) allows the water extracted during filtration process of the cheese to be discharged through the means of pressure applied by the lid (6) to the lid inner cheesecloth (5). Tie piece positioned on the lower hoop mold (1) enables lower hoop molds to stick together. Once the lower hoop molds (1) that stick together, long side of the frame (7) and the short side of the frame (8) are stick welded together through the stick welding tie piece (2) located on the lower hoop mold (1) hoop mold becomes ready to use. Hoop mold can be stacked by means of seating the centering pin (9) located on the short side of the frame (8) to the centering and locking gap (10) positioned on the short side of the frame (8) which will be placed thereon.
