Vending machine would have individual storage area for various type of hollow breads, various flavors of water, sauces, ingredients and fillings which could be replenished manually as and when required. Panipuri Vending machine would have an option to cool flavored water and heat any of the fillings, as per buyer's preference

The present disclosure is from the field of food industry that is related to vending of popular street snack 'Pani-Puri'/'Water ball' of Indian origin. The present disclosure aims to dispense 'Pani-Puri' via an automated vending machine. Prior & Related Art
Pani-Puri ( panTpGn ) is a common street snack in several regions of the Indian
subcontinent. Pani-Puri ( panTpGn ) is a word in Hindi Language. It comprises of a spherical/elliptical, fried crisp, hollow bread and is filled with a mixture of flavored water and other spices like tamarind sauce, boiled potato, chopped onion, boiled white peas etc. The hollow bread could be made of wheat flour, semolina etc.
Pani-Puri literally means "water bread". Pani-Puri has various names, depending on the region. In some parts of Indian states like Punjab, Haryana, Jharkhand, and in other regions, it is called 'Gol Gappa'; in Rajasthan and Uttar Pradesh, 'Pani-Puri'; in West Bengal and Bihar, 'Puchka'; in Sylhet, 'Pakodi'; in parts of Odisha, South Jharkhand, Chhatisgarh, Hyderabad, and Telangana, 'Gup Chup'; and in Madhya Pradesh, 'Phulki' and many more name as per the locale.
Usually the street vendors separately store spherical hollow bread (the round, hollow bread which is fried crisp), flavored water, sauces and other fillings (boiled potato, white peas, sprouts, chopped onion etc.). At time of serving the vendor would take up a spherical hollow bread, would make a hole with thumb/finger, would fill flavored water in spherical hollow bread and supplement same with sauce and fillings as per customers preferences.
The whole procedure is manual and needs to be done just before serving as the hollow bread soaked in flavored water would loose crispiness and would also start leaking. Customers hold a small plate or bowl and stand around the vendor's cart. The vendor then starts making one Pani-Puri at a time and gives one to each individual. Pani-Puri vendors have to remember each customer's preferences such as sweetened water, more filling or extra onions. The vendor must keep count of how many Pani-Puris each person has had.

Few companies have been selling packaged Pani-Puri wherein the hollow bread is packed separately and paste/powder is included which needs to be prepared as flavored water, by customers themselves.
Pani-Puri is popular in all segments but hygiene and water quality have always been concern as most of the street vendors usually use unfiltered water and serve with bare unclean hands. While few of the vendors have started using hand gloves and other methods but still the overall hygiene is matter of concern.
There have been many vending machine already in operations which could vend items like snacks, beverages, alcohol, cigarettes, condoms etc. There are also specialized food vending machine, which could cook/microwave food items like pizza and other snacks.
Existing vending machines which are designed to dispense fix sized articles, cannot dispense the Pani-Puri, due to following reasons:
1 . Pani-Puri cannot be prepared and loaded in storage for dispensing, as the hollow bread filled with flavored water would lose it's crispiness and start leaking
2. All the components of Pani-Puri like hollow crisp bread, flavored water, sauces , fillings etc. need to be stored separately 3. Automated system for preparation of Pani-Puri would need specialized automation to hold a hollow bread, make a hole and fill same with desired flavor of water, sauces, spices and fillings.
4. The automated dispensing/serving system would need to
dispense/serve a Pani-Puri one by one to a customer. In order to manage crowd, vending machine would need to dispense/serve multiple customers in parallel
5. The dispensing system has to be in sync with the speed at which the customer can eat Pani-Puri
Following are the publications in context to Pani-Puri dispensing/making machine:
1 . Application number 201631001687. In this published disclosure
inventor has given an embodiment which could smash a boiled potato and add spices/flavor to it. The smashed potato is filled inside the puri and dispensed. The flavored water is dispensed separately in different plate and there is no mechanism/system/method for same. The disclosure does not include the transaction mechanism and buyer interface unit. The disclosure can be used only if a human resource is present to operate and take dispensed puri and server water separately. The embodiment also needs prepared flavored water and cannot handle any other stuffing like boiled grams, diced onion etc. The drawings are not clear in the disclosure and not much could be interpreted from the given disclosure.
2. Application number 3500/MUM/201 1 . In this published disclosure the inventor has disclosed an embodiment but the given disclosure will fail as the processed puri with filling and filled with water is supposed to slide out of inclined part #36. As the puri is spherical/elliptical there is no mechanism disclosed how the puri would be served without toppling. Secondly the disclosure does not give a successful mechanism on how the puri from storage unit could be dispense out one by one to the processing plate. The described mechanism of screw 5 is not depicted in the disclosed drawing. The disclosure does not include the transaction mechanism and buyer interface unit. Even if somehow the above defects are managed, the system can be used only if a human resource is present to operate.
3. Application Number 201721012744. In this published disclosure, the drawing depicts a column where single puri could be stacked one over other. Such mechanism may not be suitable for commercial purpose as the length of stack and storage capacity is not viable. The inventor disclosed mere idea/concept how the system could be built. The drawing and details are not sufficient to understand how the puri feeding system, piercing system, water dispensing unit, stuffing unit etc. would work.
To overcome the said drawbacks the present disclosure aims at providing the Pani-Puri via the specialized automated vending machine.
The automated Pani-Puri vending machine would ensure utmost hygiene and quality water from water purifier, it will also reduce the cost of human resource and would provide 24/7 service to the consumers.
Summary of Invention An aspect of present disclosure provides an automated vending machine, specially designed for preparing and dispensing Pani-Puri wherein a buyer can choose desired quantity, one or more type of hollow bread, one or more flavors of water, one or more sauce and one or more filling. After the successful payment by the buyer over the preferred mode(cash/cashless), the vending machine would prepare and serve a Pani-Puri one by one to the buyer. Vending machine would have one or more dispensing counter to serve multiple buyers at a time. Vending machine would have individual storage area for various type of hollow breads, various flavors of water, sauces, spices and fillings which could be replenished manually as and when required.
Pani-Puri Vending machine would have an option to cool flavored water and heat any of the fillings as per buyer's preference.

Detailed Description
Various embodiments of the present disclosure provide a vending machine which dispenses 'Pani-Puri' upon buyer's requirement. The vending machine comprises of storage units for storing 'Spherical/elliptical hollow bread', spices, sauces, water, one or more flavored water, one or more fillings, disposable cups/plates. The 'Pani-Puri vending machine' also has a processing unit which makes Pani-Puri as per buyer's selection and a dispensing system to dispense the processed Pani-Puri in a disposable cup/plate, a buyer interface unit for allowing a buyer to choose appropriate option and guided instructions to transact through the vending machine, a control unit connected to the buyer interface unit for processing and
dispensing the Pani-Puri as per buyer's selection, a transaction unit for buyer to make payment via cash/card/token and a communication unit connected to the control unit for authenticating the transactions from third party server.
With reference to Fig. 1 the 'Automated Pani-Puri Vending Machine' 100 is provided in accordance to an embodiment of the present disclosure. The 'Automated Pani-Puri Vending Machine' comprises of storage unit 101 for storing 'spherical/elliptical hollow bread ', storage unit 102 for storing sauces, storage unit 103 for storing spices, storage unit 104 for storing water, storage unit 105 for storing one or more flavored water, storage unit 106 for storing one or more filling, storage unit 107 for storing disposable cup/plate, control unit 108, buyer interface unit 109,transaction unit 1 10, process unit 1 1 1 , dispensing unit 1 12, Trashing unit 1 13, refrigeration unit 1 14, filler heating unit 1 15, CIP unit 1 16 , communication unit 1 17 as means of connection to remote server and other third party transaction server.
The vending machine 100 of the present disclosure as shown in the figure 1 comprises of the buyer interface unit 109. The buyer interface unit 109 allows a buyer to operate the vending machine 100. The buyer interface unit 109 comprises of an input unit and a display unit. The input unit of the buyer interface unit 109 allows the buyer to enter the buyer's requirement such as quantity etc. in accordance to which the Pani-Puri is to be dispensed. The display unit is configured to display the buyer entered details and
corresponding details of the selected options, quantity and/or price of the item/option to be dispensed. The input unit may be a keypad, touch screen, etc, and the display unit may be a liquid crystal display (LCD), liquid emitting diode (LED), etc. The input unit and display unit could be an integrated touch screen.
In an embodiment of the disclosure, the transaction unit 1 10 comprises currency 1 10a and/or card(swipe/contactless) and/or token 1 10b and/or SMS and/or NFC reading unit is connected to the buyer interface unit 109. The currency and/or card reading unit 1 10 is configured for receiving currency and/or card information from the buyer. In accordance to an embodiment of the disclosure, the control unit Fig. 1 108 receives input from the buyer interface unit 109 and transaction unit 1 10.
In accordance to an embodiment of the disclosure, the communication unit 1 17 may have one or more options of communicating to central server over media like GSM/GPRS/2G/3G/4G/CDMA/Ethernet/Wireless/Bluetooth/Zigbee etc.
Fig 2 shows the isometric view of the 'automated Pani-Puri vending machine' The machine has strong frame 7 to support all sections, components and enclosure panels. The machine includes water storage tank 6, wherein the drinkable water is stored and pumped to 'flavored water preparation and storage unit' by means of water pump 12. The refrigeration unit including compressor 4 and heat exchange coil 9 maintains the temperature of the inside processing and dispensing section of the 'automated Pani-Puri vending machine'.
Controlled temperatures is maintained to keep fillings, sauce fresh and to keep flavored water cool. The Puri(crispy fried, hollow spherical/elliptical indian bread) storage unit 5 is located above the processing unit and puris are filled from the top. Disposable cup/plate stacking and dispensing unit 9 is part of dispensing unit 1 12. Fig. 2 shows two processing and dispensing unit wherein two buyers can stand and eat Pani-Puri at same time.
The user interface unit 101 includes display unit 1 , keypad 3, cash and card accepting unit 2. The display unit 1 is a screen where user can follow the instructions to operate the 'automated Pani-Puri vending machine'. The keypad 2 allows user to select the options, quantity and other inputs. The cash and card acceptor unit 2 accepts the payment via cash/token/card.
Fig. 3 shows the rear isometric view of the 'automated Pani-Puri vending machine' and detailed view of processing and dispensing area and the puri stacker 16 which is part of the puri storage unit 5. Fig. 3 also shows AC-DC power supply 14 and control unit 15 which is connected to all the sections as shown in Fig.1 Fig. 4 shows the isometric view of puri storage unit 5. The puri storage unit 5 has two puri stacker 16. These two stackers dispense puri to the respective processing unit via dispensing cup as shown in detail view, Fig. 4E. The motor controlled dispensing cup is attached to the end of puri stacker 16 and has a stepper motor 72 driven by control unit 15. The shaft of stepper motor 72 is connected to rotating shaft 74 which has cavity 75 to hold a puri. The puri in area 73 slips in cavity 75 and rotating shaft 74 is rotated by stepper motor 72 by 180 degrees to dispense the puri, out to processing unit. The dispensing cup has heating coil in area 73, which can make servings hot and remove moisture as per preferences of buyer.
Fig 5 and Fig 6 shows the side view and isometric view respectively of 'flavor water processing unit and storage unit'. This unit gets water pumped from water storage tank 6 by means of water pump 12, the water inlet 20 is governed by solenoid valve 24, which is actuated by control unit 15, only when addition of water is required. The control unit senses the water level in flavor storage unit 10 by means of an ultrasonic level sensor attached beneath the solenoid valve 24. Based on the volume of water added to the 'flavor water preparation and storage unit' 10, the sauce storage unit 18 and spice storage unit 19 which are connected to control unit 1 5, adds the spices to the 'flavored water preparation and storage unit'. The mixing blade 17 is kept rotating by motor 21 to keep flavored water consistent and avoid sedimentation of spices/sauces. The outlet 22 is governed by solenoid valve 23 connected to control unit 15. In case the puri is filled to top, the outlet 22 also has pair of infrared sensor which will sense and stop the flow of flavored water through solenoid valve via breaking power circuit of solenoid valve 23 using mechanical or solid-state relay.
Fig. 7 shows the hole making unit 26 which makes hole in the top surface of the puri. All stuffing(sauces, fillings and flavor water) in puri is filled through this hole. The hole making unit includes a geared motor 28 controlled by control unit 15. The shaft of the geared motor 28 is connected to the threaded screw 32, which passes through a threaded hole of sliding block 32. The sliding block has a pointed hole making head 29, which could easily make a hole in crispy thin surface of puri.
Fig. 8 shows the filling storage unit 27 which can hold stuffing like boiled and diced potato, boiled grams, diced onion etc. The filling container 33 and mouthpiece 34 holds the stock of stuffing. The mouthpiece 34 is attached to dispensing cup 35. The dispensing cup is motorized and works similarly as shown and explain for the dispensing cup mechanism in Fig 4E, to dispense the stuffing via outlet 36. The motor 37 is controlled by control unit 15 to dispense the filling as per buyer's selected options.
Fig. 9 shows the spice storage unit 41 which can hold mixed spices for required flavor. The filling container 41 holds the stock of spices. The storage unit 41 is attached to dispensing cup 39. The dispensing cup is motorized and works similarly as shown and explain for the dispensing cup mechanism in Fig 4E, to dispense the spices via outlet 38. The motor 40 is controlled by control unit 15 to dispense the spices as per recipe of flavor water and volume of water added to the respective 'flavor processing and storage unit' 10.
The dispensing cup as shown if Fig 4E has same structure and mechanism in 'filling storage unit' 27, 'spice storage unit' 19 and 'puri dispensing stack' 16 but the overall size and size of cavity in the rotating shaft is customized to hold the puri/stuffing/spices appropriately.
Fig. 10 shows the sauce storage unit 18 which includes sauce container 42, connected to mouthpiece 46, stepper motor 43, threaded screw 45 and piston face plate 44. The sauce is filled by opening/unscrewing the mouthpiece and topping up the sauce container 42. The stepper motor is driven by control unit 15. The shaft of stepper motor 43 is connected to the threaded screw 45 which passes through threaded hole in piston face plate 44. Based on recipe and volume of water added to 'flavored water preparation and storage tank' 10 the control unit 15 drives stepper motor 43 to dispense the sauce. The sauce storage unit 18 is also used to dispense sauces like tamarind, jaggery etc. directly to the puri with a hole under processing line. The control unit 15 drives the stepper motor 43 to dispense sauce as per the recipe and buyer's selection
Fig 1 1 shows the dispensing unit including puri holder plate 48, mounted over sliding plate 49. The sliding plate 49 is mounted over pair of linear bearing 51 which slides over pair of linear shaft 56 held by pair of shaft holder 54 at each end. The position of the puri holding plate is controlled by control unit 15 by driving the stepper motor 53, which is connected to the sliding plate by timing belt and pulley 57. The puri holding plate is rotated on a position by control unit 15 by driving stepper motor 50. Electrical wire to the unit are connected through terminal 55. Fig 12 shows the disposable cup/plate stack unit 8 and stack holding plate 63. The claws 69 and 70 connected to servo motor 68 will pick the plate from stack plate 63 and same is placed over puri holding plate 48. The servo motor 68, stepper motor 65,64 and 71 are connected and driven by control unit 15.
Fig 13 shows the sequence of sections assembled in processing and dispensing area. After a buyer has selected the options and quantity and made payment by cash/card, using the buyer interfacing unit 101 , the control unit 15 sends command to dispensing unit 1 1 which brings puri holder plate 48 under puri stacker unit 16 to dispense the puri as per selected quantity. The puri holding plate 48 rotates and the puri stacker 16 unit dispenses a puri. The puri holder plate 48 slides under hole making unit 26. The control unit send command to hole making unit and the hole making head 29 slides down to make a hole in the top surface of puri and again moves back to default position. Once the hole is made in a puri, the puri holder plate moves under required 'filling storage unit' 27 and sauce storage unit 18. The control unit 15 instructs the respective filling storage unit/sauce storage unit to dispense as per buyer's selection and recipe. Once fillings and sauce are stuffed, the puri holding plate comes under water outlet 22 of flavor processing and storage unit 20. Bases on user's selection and recipe the control unit 15 send command to solenoid valve 23 of the respective 'Flavor water preparation and storage tank' to dispense the flavored water. Finally, the puri holding plate 48 moves to the take away area from where the buyer picks the puri and the puri holding plate 48 slides back to filling storage area for next puri processing.
The take away area has occupancy sensor which could sense when the puri is picked up by the buyer and triggers the dispensing unit to start processing next puri. Once the transaction is complete for a buyer the trash unit 1 13 which is similar in design and function of cup/plate stacking unit 8 as shown in Fig 13, picks and places the used tray in bin.
The geared motors, stepper motors and servo motors are connected to control unit 15, to manage the speed and direction of motors. The PWM(Pulse width modulation) circuit is maintained individually for each motor. The control unit 15 derives/ identifies the home position of axis by measuring the stall current for respective motor.
With reference to Flowchart 1 which provides in accordance to an
embodiment of the disclosure, a high level process/operation flow. For example a buyer selects a flavored water, sauces and fillings followed by quantity and preferred mode of payment as cash. The Buyer interface unit would display the selected options and would instruct to insert cash in transaction unit. Once the buyer inserts required denomination of cash and control unit validates the same, control unit would instruct dispensing unit to prepare Pani-Puri and place in takeaway area. Once the Pani-Puri is placed in the process area, the processing unit would make a hole on top surface after which the control unit would instruct dispensing unit to add sauces, spices, fillings and flavored water as per buyer's selection and place Pani-Puri upright from process area to takeaway shelf from where the buyer will pick up the Pani-Puri.
Further, the vending machine also comprises a clean in place (CIP) unit (not shown) for performing different functions like flushing, cleaning, rinsing and chemical dosing the vending machine. The clean in place unit (CIP) can be operated remotely or locally.
Following are the advantages of the present disclosure:

While the present disclosure has been described with respect to certain embodiments, it will be apparent to those skilled in the art, that various changes and modification may be made without departing from the scope of the disclosure, as defined in the claims.

Claims

We Claim
1 . A system for 'Automated Pani-Puri Vending Machine' specially designed for preparing and dispensing Pani-Puri . The system for 'Automated Pani-Puri Vending Machine' comprises of following:
Storage area comprising of compartments and tanks as means of storing Spherical/elliptical hollow bread, water, flavored water, fillings, sauces, spices and disposable plates/cups
Control unit as the core unit for processing command and response
required for each transaction
Buyer interface unit connected to control unit for allowing buyer to
interact with vending machine and opt for appropriate purchase
Transaction system connected to control unit and buyer interface unit as means to receive payment from buyer comprising of all or any
combination of the following:
i. Cash based transaction system
ii. Cashless transaction system
Process system connected to control unit for preparing Pani-Puri as per buyer's selection, comprising of all or any combination of following: i. System to hold one or more hollow bread from the compartment of chosen hollow bread
ii. System to make hole on the top side of hollow bread
iii. System to add one or more fillings to the hollow bread in
required proportion, as per buyer's selection
iv. System to add one or more sauces to the hollow bread in
required proportion, as per buyer's selection
v. System to prepare flavored water by mixing water, spices and other sauces in required proportion to meet buyer's selection vi. System to fill hollow bread with flavored water
Dispensing System connected to control unit comprising of the following: i. Dispensing System as means of picking and moving a 'disposable plate/cup' to dispense area of the respective buyer's counter ii. Dispensing System as means of moving the 'Pani-Puri'
appropriately
without spilling from process area and place same in the 'disposable plate/cup' kept in takeaway area of the buyer's counter
2. The claim as made in claim 1 , wherein the buyer interface unit comprises of the following:
iii. At least one input unit for allowing the buyer to choose an option and payment mode
iv. At least one display unit configured for displaying the buyer
instructions to select an option and compete transaction
3. The claim as made in claim 1 , wherein the control unit comprises of the following:
i. Logic to interpret buyer's input from buyer interface unit
ii. Logic to send and receive commands to/from transaction unit and complete transaction iii. Logic to send and receive command to process system as per buyer's input
iv. Logic to send and receive command to dispensing system as per response from process system
4. The claim as made in claim 1 , wherein the transaction system connected to control unit comprises of all or any combination of the following:
i. Currency receiving unit for receiving payment in cash
ii. Card receiving unit for receiving payment via remote authentication from card issuing agency
iii. Token receiving unit for receiving payment via recognized token
