Abstract
There is disclosed an enzyme having a denaturing temperature of 70°C and above, with an optimum pH of 6-9 and a method of production thereof. In one embodiment, the method comprising the steps of: selecting and isolating at least one strain of at least one microorganism by means of enrichment technique; culturing the strain of the selected and isolated microorganism; and obtaining the enzyme from the culture of the strain thereof.
