Abstract

It is intended to provide a method of producing an ω3-highly unsaturated fatty acid obtained at a relatively low price, which is excellent in productivity and requires neither complicated step nor high temperature/high pressure. Namely, a method of producing an ω3-highly unsaturated fatty acid which comprises the step of feeding landlocked freshwater fish (in particular, rainbow trout) and/or inland water cultured salmon fish with a feed containing α-linolenic acid and the step of extracting the ω3-highly unsaturated fatty acid from an oil obtained from the freshwater fish. The feed containing α-linolenic acid is a feed containing linseed oil. The feed containing linseed oil is a feed containing linseeds. The feed may contain Japanese basil oil or perilla oil as a substitute for the linseed oil or together with the linseed oil.
