Abstract

A supercooling apparatus is provided to make porous ice of enhanced texture by forming an abundance of air bubbles in the ice. The supercooling apparatus comprises: a container (21) for storing liquid in a supercooled state; a phase converter (22c) for giving a shock to freeze a supercooled liquid in the container (21 ); and a drain hole (21g) formed in the container (21) to discharge liquid. Through this configuration, a supercooled state is forced to be released, most supercooled water remaining in a liquid phase even after the lapse of a predetermined period of time is drained, and water in a solid phase in the container is frozen rapidly while having air bubbles remained between solid portions. In result, porous ice of better texture is produced.
