PRODUCTO PARA SU UTILIZACIÓN EN LA PREVENCIÓN Y TRATAMIENTO DE ENFERMEDADES CARDIOVASCULARES, CÁNCER Y ENFERMEDADES
INFLAMATORIAS CRÓNICAS
La presente invención se refiere a un nuevo producto que contiene ácido oleico y licopeno que es útil para Ia prevención y el tratamiento del cáncer, enfermedades cardiovasculares y enfermedades inflamatorias crónicas. ANTECENDENTES
Durante los últimos años se han identificado los mecanismos celulares y moleculares que regulan los procesos inflamatorios que tienen lugar durante Ia ateromatosis, Ia arteriosclerosis y Ia enfermedad cardiovascular. El desencadenante de Ia alteración estructural y funcional de Ia pared arterial es Ia concentración de LDL oxidada en el plasma y en Ia propia pared arterial. Está demostrado que Ia forma de LDL oxidada es más importante en Ia enfermedad cardiovascular que los niveles absolutos de colesterol total, colesterol-HDL y colesterol-LDL. Esto es debido a Ia forma de actuar de LDL oxidada que es un activador del proceso inflamatorio cardiovascular.
En primer lugar, Ia LDL oxidada induce una alteración endotelial que consiste principalmente en Ia interrupción en el proceso de producción de óxido nítrico (NO) que daña a las células endoteliales iniciándose un proceso en el cual se va perdiendo el tono vascular y además estas células comienzan a expresar moléculas de adhesión en su superficie que atraen a los monocitos de Ia sangre al foco vascular dañado. Estos monocitos migran al interior de Ia pared vascular fagocitando partículas de colesterol-LDL oxidado, activándose y transformándose en Io que conocemos como "células espumosas". La acumulación de estas células espumosas (placa aterogénica) es verdaderamente dañina para Ia pared vascular por varios motivos, 1 ) se pierde el tono vascular, 2) se produce una alteración en el flujo sanguíneo que favorece los
procesos trombóticos locales, 3) las células espumosas producen citoquinas inflamatorias (fundamentalmente Interleuquina 1 y Factor de necrosis tumoral, TNFα) que regulan el proceso de inflamación local, y 4) estas células espumosas producen una serie de enzimas conocidas como metaloproteinasas que destruyen Ia matriz extracelular del tejido conectivo, y al disminuir Ia cantidad de colágeno, hacen Ia placa de ateroma más frágil, por Io que Ia inflamación arterial, además, facilita Ia rotura de Ia placa, y consiguientemente, Ia aparición de clínica isquémica. El término NF-κB engloba una familia de factores de transcripción ampliamente expresados que, en mamíferos, está constituida por 5 miembros: p65 (ReIA), ReIB, c-Rel, NF-κB1 (p50 y su precursor p105) y NF-κB2 (p52 y su precursor p100). La ruta de NF-κB se activa por una gran variedad de estímulos inflamatorios que pueden ser inhibidos mediante nutracéuticos (término referido en Ia presente invención como componentes de los alimentos que aportan un beneficio añadido para Ia salud), validando así el uso de los mismos en Ia prevención no sólo de Ia enfermedad cardiovascular sino también en los procesos inflamatorios crónicos que acompañan a Ia malignidad de ciertos cánceres humanos (por ejemplo, de colon y próstata). Tanto el aceite de oliva como el tomate han demostrado ser dos alimentos de extraordinario valor como alimentos funcionales y, por Io tanto, beneficiosos para Ia
salud. Estos beneficios para Ia salud son debidos a las diversas actividades biológicas claramente demostradas para Ia mayoría de los compuestos presentes en ambos alimentos.
El extracto de tomate es rico en licopeno, fitoeno, fitoflueno, β-caroteno, tocoferoles y otros productos fitoquímicos bioactivos. El licopeno, fitoeno, fitoflueno y β-caroteno son carotenoides presentes en Ia dieta y se encuentran de manera habitual en el suero humano. La vitamina E en el tomate se halla como una mezcla de α, β, γ y Δ tocoferoles. Los carotenoides son pigmentos naturales que contribuyen a las pigmentaciones amarillas, naranjas y rojas de los tejidos vegetales, que son sintetizados únicamente por plantas, hongos, bacterias y algas y, por Io tanto, deben de ser incorporados en Ia dieta.
Un gran número de estudios epidemiológicos han sugerido una asociación entre el alto consumo de vegetales y frutas ricas en carotenoides y una reducción del riesgo de sufrir cáncer. El principal órgano que se ha relacionado con el consumo de licopeno es Ia próstata. Se han desarrollado diversos estudios clínicos en los que se investiga sobre el efecto del licopeno en varones. Tras una dieta rica en este caroteno, se observa un incremento de dicho compuesto en el plasma de los sujetos. Existen pruebas de que este incremento en las concentraciones de licopeno en el suero y en los tejidos, se relaciona con un descenso del estrés oxidativo y del daño al ADN provocado en células de Ia próstata. Una medida clínica de Ia posibilidad de sufrir cáncer de próstata consiste en Ia medida de Ia concentración de una enzima concreta, Ia fosfatasa alcalina, en sangre. Sujetos a los que se administran ingestas elevadas de tomate sufren un descenso en los niveles sanguíneos de dicha enzima. Normalmente niveles bajos de fosfatasa alcalina indican un mejor estado de salud del tejido prostético. En varios estudios clínicos se demuestra una menor incidencia de cáncer de próstata en individuos alimentados con mayores dosis de licopeno y que, gracias a ello,
presentaban mayores niveles de licopeno en el plasma. El mayor efecto del licopeno fue observado en hombres que consumían frecuentemente productos derivados del tomate cocinados, tales como Ia salsa de tomate con aceite. Además de los efectos anticancerígenos del licopeno a los que acabamos de hacer referencia, se han descrito otros efectos biológicos mediados por este compuesto. Se ha demostrado que el consumo de licopeno se asocia también con una menor incidencia de enfermedad cardiovascular. Concretamente, algunos científicos han estudiado Ia asociación del licopeno y otros carotenoides con las lipoproteínas de baja densidad (LDL), las cuales juegan un papel muy importante en el desarrollo de aterosclerosis. El consumo de aceite de oliva, especialmente en su calidad "virgen extra" aporta a nuestra salud una serie de ventajas biosaludables, hasta el punto de convertirla en Ia grasa vegetal más beneficiosa para Ia salud humana, de acuerdo con numerosos estudios científicos.
El aceite de oliva tiene un elevado contenido en grasas monoinsaturadas, que en un consumo habitual contribuyen a Ia disminución de Ia concentración de colesterol en Ia sangre. Además de los ácidos grasos, el aceite de oliva consta de una fracción insaponificable. Se trata de un grupo muy heterogéneo de sustancias presentes en baja concentración, y entre las que se incluyen carotenos, escualeno y otros hidrocarburos, tocoferoles, fitoesteroles, polifenoles y numerosos compuestos que contribuyen a conferir al aceite su color, sabor y aroma característicos. Estos componentes desarrollan importantes actividades biológicas, ya que muchos de ellos actúan como vitaminas y antioxidantes naturales y pueden tener efectos en Ia disminución del colesterol, antiaterogénicos y antiinflamatorios. En este sentido, es destacable el contenido en vitamina E del aceite de oliva virgen extra, ya que un consumo moderado de aceite cubre Ia mayor parte de las recomendaciones dietéticas de esta vitamina. Los efectos en Ia concentración y en Ia composición de las grasas en Ia dieta y Ia toma de colesterol en el desarrollo de Ia enfermedad coronaria cardiovascular son Ia base de Ia hipótesis lipídica de Ia aterosclerosis. Por Io tanto, Ia composición de Ia dieta no se relaciona únicamente con Ia concentración de lípidos y lipoproteínas circulantes, sino también con Ia incidencia y Ia prevalencia de Ia enfermedad cardiovascular en Ia población. La clase y Ia densidad de las LDL, en combinación con Ia genética y Ia dieta de cada individuo, debe de jugar un importante papel en el riesgo de que un sujeto sufra enfermedad coronaria. Otra propiedad ventajosa de los ácidos grasos monoinsaturados es su poder contra Ia oxidación de las lipoproteínas LDL, hecho demostrado ampliamente. La oxidación de las LDL es probablemente un factor importante en Ia aterogénesis, ya que las partículas LDL oxidadas no pueden ser reconocidas por el receptor LDL y, entonces, se asocian a unos receptores de macrófagos, de modo que estos acumulan el colesterol llevando a Ia formación de células espumosas y de secciones de grasa. Estos sucesos provocan el desarrollo de Ia aterosclerosis. Los ácidos grasos monoinsaturados, gracias a su estructura química, son muchos más estables y menos propensos a Ia peroxidación lipídica que los ácidos grasos poliinsaturados (más inestables). Es decir, una alta ingesta de ácidos grasos monoinsaturados nos lleva a un aumento de Ia concentración de estos ácidos grasos en las partículas LDL. Esto nos lleva a una menor susceptibilidad de estas partículas a las modificaciones por oxidación in vitro, cuando Io comparamos con partículas de LDL que contienen altas concentraciones de ácidos grasos poliinsaturados (consecuencia

Las olivas y el aceite de oliva contienen altas concentraciones de antioxidantes fenólicos, de escualeno y de vitamina E. Algunos estudios han demostrado Ia relación entre el consumo de alimentos ricos en vitamina E y una menor mortalidad por enfermedad cardiovascular.
El hidroxitirosol forma parte de los compuestos fenólicos del aceite de oliva. Se ha observado su ingestión por parte del organismo, Io que es imprescindible para demostrar su actividad. Este compuesto presenta una fuerte actividad antioxidante, que defiende a las LDL de ser oxidadas. Esta actividad antioxidante es incluso mayor que Ia de tocoferoles o carotenos. A diferencia de los productos conocidos ya en Ia técnica, Ia presente invención proporciona un producto que comprende, principalmente, ácido oleico y licopeno, junto con otros antioxidantes naturales, y que presenta las siguientes ventajas: (a) por su
capacidad antioxidante, puede regular Ia oxidación de las LDL que provocan el desarrollo de Ia enfermedad cardiovascular; (b) debido a Ia presencia de compuestos inhibidores del factor de transcripción NF-kB, puede regular fenómenos inflamatorios, los cuales se relacionan con Ia aparición y desarrollo de diversas patologías crónicas como Ia enfermedad cardiovascular, Ia artritis reumatoide, y Ia inflamación asociada a tumores; (c) gracias a que contiene compuestos potencialmente anticancerígenos, puede impedir, disminuir o retrasar el riesgo de cáncer de diversas etiologías; (d) debido a Ia presencia de antioxidantes naturales se produce un efecto sinérgico; (e) es fácil de preparar y (f) tiene un sabor agradable para el paladar. Dichas ventajas se pueden encontrar individualizadas en diferentes productos, pero no existe un producto como tal que englobe todas estas características. DESCRIPCIÓN DETALLADA DE LA INVENCIÓN
Un aspecto de Ia presente invención se refiere a un nuevo nutracéutico que comprende cantidades terapéuticamente efectivas de ácido oleico (ácido graso monoinsaturado con propiedades reguladoras de Ia respuesta inflamatoria) y licopeno (carotenoide con actividad preventiva de Ia enfermedad cardiovascular), que se emplean junto con cantidades adecuadas de uno o varios de los siguientes compuestos: (a) β-caroteno (principalmente procedente del tomate y del aceite de oliva y precursor de Ia Vitamina A con una importante capacidad antioxidante) y/o una cantidad equimolar de sus derivados, preferiblemente, tales como retinol (vitamina A) y derivados del mismo; (b) retinol (principalmente procedente del tomate y del aceite de oliva) y todos sus derivados por acción (bio)química, preferiblemente, sus isómeros retinol todo-trans y 11-cis retinol, los productos de oxidación ácido retinoico todo-trans, ácido 13-cis retinoico, ácido 9-cis retinoico y el producto de reducción 11-cis retinal, junto con todos los derivados del mismo; (c) ácidos grasos libres (principalmente procedentes del aceite de oliva y actúan como reguladores del metabolismo de las
LDL) tales como el ácido linoleico, linolénico, palmítico, esteárico, araquidónico, palmitoleico, gadoleico y behénico, así como los derivados por (de)saturación de los mismos, preferiblemente ácido palmítico, esteárico, oleico, linoleico, linolénico, araquidónico; (d) fitoesteroles (compuestos pertenecientes a Ia fracción insaponificable del aceite de oliva que combinan un amplio rango de actividades biológicas antioxidantes, anticancerígenos y antiaterogénicas), tales como β-sitosterol, camesterol, estigmasterol, cicloartenol, sitostanol, campestanol, preferiblemente β-sitosterol, o concentraciones equimolares de sus derivados (conjugados de ácidos grasos libres formando esteres) y sus productos de saturación, tales como los tocoferoles (pueden actuar reduciendo el riesgo de sufrir enfermedad cardiovascular) junto con sus isómeros a-vitamina E-, β y γ, y otros tocotrienoles; (e) tirasol (ácido fenilacético derivado de Ia tirosina ([2-(4-hidroxifenil)etanol]) perteneciente a Ia fracción insaponificable del aceite de oliva) y sus derivados procedentes de Ia hidrogenación, tales como el hidroxitirosol [2-(3,4-dihidroxifenil)etanol]. La adición de estos antioxidantes naturales a Ia mezcla inicial compuesta por licopeno y ácido oleico proporciona un efecto que puede sumarse a Ia actividad antioxidante que se proporcionaría si actuasen cada uno de manera individual.
En una realización preferente de Ia presente invención se proporciona una composición, preparada mediante mezcla y homogeneización, que se administra de forma oral y que en un volumen de 20 mi contiene:
• Ácido Oleico en una cantidad que varía entre 1 y 15 g.
• Licopeno en una cantidad que varía entre 1 y 125 mg.
• β-caroteno en una cantidad que varía entre 0,1 y 10 mg.
• Ácido linoleico en una cantidad que varía entre 0,1 y 10 g. • Ácido palmitoleico en una cantidad que varía entre 0,01 y 2 g.
• Fitoesteroles en una cantidad que varía entre 1 y 100 mg.
• α-Tocoferol (vitamina-E) en una cantidad que varía entre 0,1 y 10 mg.
• Derivado de tirosol, preferiblemente el tirosol-hidroxitirosol en una cantidad entre 0,01 y 1 mg.
Otro aspecto de Ia presente invención se refiere a Ia utilización del presente compuesto como:
(a) antioxidante, ya que puede regular Ia oxidación de las LDL que provocan el desarrollo de Ia enfermedad cardiovascular;
(b) regulador de procesos inflamatorios debido a Ia presencia de compuestos inhibidores del factor de transcripción NF-kB, donde dichos procesos se relacionan con Ia aparición y el desarrollo de diversas patologías crónicas tales como Ia enfermedad cardiovascular, Ia artritis reumatoide, y Ia inflamación asociada a tumores;
(c) potencialmente anticancerígeno, ya que puede impedir, disminuir o retrasar el riesgo de cáncer de diversas etiologías;
EJEMPLOS Los siguientes ejemplos no son limitativos e ilustran Ia invención para una composición de extracto de tomate, aceite de oliva y una mezcla de aceite de oliva y extracto de tomate.
EJEMPLO 1 : Inhibición de Ia activación del factor de transcripción kappa B
(NF-κB) inducida por TNFα con un extracto de tomate que contiene un mínimo de 6% de licopeno en células linfoides.
MÉTODO
Células. Una línea celular 5.1 , que es un clon derivado de Jurkat transfectado establemente con un plásmido que contiene el gen de Ia luciferasa dirigido por el promotor HIV-LTR, se mantuvo en crecimiento exponencial en medio RPMI 1640 suplementado con un 10% de suero bovino fetal inactivado por calor, 2 mM de
L-glutamina, 1 mM HEPES, antibióticos y 200 μg/ml de G418.
Ensayo de luciferasa. La línea celular 5.1 se preincubó durante 30 minutos con extracto de tomate que tenía un contenido mínimo en licopeno del 6%, seguido de una estimulación con TNFα (2 ng/ml) durante 6 horas. A continuación, las células se .usaron en 25 mM tris-fosfato pH 7,8, 8 mM MgCI2, 1 mM DTT, 1% Tritón X-100, y 7% glicerol. La actividad luciferasa se midió empleando un Autolumat LB 9501 atendiendo a las instrucciones del kit de ensayo de luciferasa y Ia concentración de proteínas se midió mediante el método Bradford. Para eliminar el ruido de fondo provocado por Ia solución de lisis, este valor fue sustraído en cada valor del experimento y se expresó Ia activación como una inducción proporcional con respecto a células sin tratar. Composición del extracto: El extracto de tomate empleado para el ensayo contiene principalmente: licopeno (6%), fitoeno (0,6%), fitoflueno (0,5%), β-caroteno (0,2%), tocoferoles (2%), fitoesteroles (0,6%). EJEMPLO 2: Inhibición de Ia unión al ADN de NF-κB por TNFα con extracto de tomate que contiene un mínimo de 6% de licopeno en células linfoides.
MÉTODO
Ensayo de retardo en gel. Aislamiento de proteínas y ensayo de movilidad electroforética (EMSA). Se estimularon las células 5.1 (106/ml) en un medio completo indicado anteriormente con extracto de tomate con un contenido mínimo en licopeno del 6%. A continuación, se lavaron las células dos veces con tampón fosfato salino frío, se aislaron las proteínas de los extractos nucleares y se determinó Ia concentración de proteínas mediante el método Bradford (Bio-rad). Para el ensayo de movilidad electroforética (EMSA) Ia sonda consenso de NF-kB
5'-AGTTGAGGGGACTTTCCCAGG-31 se marcó en Ia cola con [Y-32P]ATP. La mezcla para Ia reacción de unión contenía 3 μg de extracto proteico, 0,5 μg de poly(dl-dC), 2O mM HEPES, pH 7,7O mM NaCI, 2 mM DTT, 0,01% NP-40, 100 μg/ml BSA, 4% Ficoll, y 100.000 cpm de fragmentos de ADN marcados en Ia cola en un volumen total de 20 μl. Después de 30 minutos de incubación a 40C, Ia mezcla se sometió a electroforesis en gel de poliacrilamida al 6% que contenía 89 mM Tris-borato, 89 mM ácido bórico, y 1 mM EDTA. Los geles se sometieron previamente a electroforesis a 225V durante 30 minutos y, a continuación, durante 2 horas tras Ia carga de las muestras. Estos geles se secaron y se expusieron a una película de rayos X a -800C. RESULTADO

MÉTODO
Células. La línea celular A549 de adenocarcinoma de pulmón se mantuvo en medio
DMEM (Dulbecco's modified Eagle's), complementado con un 10% de suero bovino fetal inactivado por calor.
Transfecciones transitorias y ensayo de luciferasa. Las células A549 (105/ml) se transfectaron con el gen reportero LTR-Luc y con el KBF-Luc. Las transfecciones se
llevaron a cabo empleando el agente de transfección UpofectAMINE PLUS, de acuerdo con las instrucciones del fabricante, durante 24 horas. Después de Ia incubación con ácido oleico durante 30 minutos, se estimularon las células transfectadas durante 6 horas con TNFα (2 ng/ml). La actividad transcripcional de NF-κB se midió de Ia misma manera que en el ejemplo 1. RESULTADO

Ensayo de luciferasa. Se preincubó Ia línea celular 5.1 durante 30 minutos con ácido oleico en presencia de licopeno, seguido de una estimulación con TNFα (2 ng/ml) durante 6 horas. La actividad transcripcional de NF-κB se midió de Ia misma manera que en el ejemplo 1.

A Ia vista de los resultados se puede observar que tanto el licopeno del extracto de tomate como el ácido oleico del aceite de oliva ofrecen resultados óptimos por separado en Ia inhibición de Ia activación del factor de transcripción NF-κB, concretamente, en el ejemplo 1 con extracto de tomate para células linfoides, el índice de activación disminuye hasta, aproximadamente, 25 cuando Ia concentración aumenta hasta 125 μg/ml, mientras que en el ejemplo 3 con ácido oleico de Ia misma concentración para células linfoides, el índice de activación disminuye hasta, aproximadamente, 7-8.
En el ejemplo 2, se observa una menor cantidad de NF-κB unida al ADN al aumentar Ia concentración del extracto de tomate.
En el ejemplo 4, se observa un efecto similar al ejemplo 3 aunque en este caso se actúa sobre células cancerígenas.
Finalmente, el ejemplo 5 utiliza una mezcla de ácido oleico y licopeno variando Ia concentración de licopeno (10 μM y 20 μM). Se observa claramente que existe un efecto sinérgico ya que el índice de activación disminuye hasta valores por debajo de 5. Además, cuanto mayor es Ia concentración de licopeno más bajo es éste índice. En conclusión, es evidente que Ia combinación de ambos componentes
(licopeno y ácido oleico) produce un mayor efecto sobre Ia inhibición de Ia activación del factor de transcripción NF-κB, el cual está implicado en los procesos relacionados con Ia aparición y el desarrollo de diversas patologías crónicas, tales como Ia enfermedad cardiovascular, Ia artritis reumatoide, y Ia inflamación asociada a tumores.
Claims
1.- Producto que comprende una cantidad terapéuticamente efectiva de licopeno y una cantidad terapéuticamente efectiva de ácido oleico y cantidades adecuadas de uno o varios de los siguientes compuestos: (a) β-caroteno y/o una cantidad equimolar de sus derivados, tales como retinol
(vitamina A) y derivados del mismo;
(b) retinol y todos sus derivados por acción (bio)química, preferiblemente, sus isómeros retinol todo-trans y 11-cis retinol, los productos de oxidación ácido retinoico todo-trans, ácido 13-cis retinoico, ácido 9-cis retinoico y el producto de reducción 11-cis retinal, junto con todos los derivados del mismo;
(c) ácidos grasos libres, tales como el ácido linoleico, linolénico, palmítico, esteárico, araquidónico, palmitoleico, gadoleico y behénico, así como los derivados por (de)saturación de los mismos, preferiblemente, ácido palmítico, esteárico, oleico, linoleico, linolénico, araquidónico; (d) fitoesteroles, tales como β-sitosterol, camesterol, estigmasterol, cicloartenol, sitostanol, campestanol, preferiblemente β-sitosterol, o concentraciones equimolares de sus derivados (conjugados de ácidos grasos libres formando esteres) y sus productos de saturación, tales como los tocoferoles junto con sus isómeros α-vitamina E-, β y γ, y otros tocotrienoles; (e) tirosol y sus derivados procedentes de Ia hidrogenación, tales como el hidroxitirosol [2-(3,4-dihidroxifenil)etanol].
2.- Producto, según Ia reivindicación 1 , que comprende, preferiblemente: ácido oleico (1-15 g), ácido palmitoleico (0,01-2 g), licopeno (1-125 mg), β-caroteno (0,1-10 mg), ácido linoleico (0,1-10 g), fitoesteroles (1-100 mg), α-tocoferol (0,1-10 mg), derivado de tirosol (0,01-1 mg).
3.- Producto, según las reivindicaciones 1 y 2, en el que, como mínimo, el ácido oleico actúa como antioxidante.
4.- Producto, según las reivindicaciones 1 y 2, en el que, como mínimo, el ácido oleico actúa como inhibidor de NF- KB
5.- Producto, según las reivindicaciones 1 y 2, en el que, como mínimo, el licopeno actúa como antioxidante.
6.- Producto, según las reivindicaciones 1 y 2, en el que, como mínimo, el licopeno actúa como inhibidor de NF-κB.
7.- Producto, según las reivindicaciones 1 y 2, en el que el ácido linoleico actúa como antioxidante adicional.
8.- Producto, según las reivindicaciones 1 y 2, en el que el ácido palmitoleico actúa como antioxidante adicional.
9.- Producto, según las reivindicaciones 1 y 2, en el que el α-tocoferol actúa como antioxidante adicional.

12.- Utilización de una combinación de licopeno y ácido oleico junto con uno o varios de los siguientes compuestos:
(a) β-caroteno y/o una cantidad equimolar de sus derivados, tales como retinol (vitamina A) y derivados del mismo;
(b) retinol y todos sus derivados por acción (bio)química, preferiblemente, sus isómeros retinol todo-trans y 11-cis retinol, los productos de oxidación ácido retinoico todo-trans, ácido 13-cis retinoico, ácido 9-cis retinoico y el producto de reducción 11-cis retina!, junto con todos los derivados del mismo; (c) ácidos grasos libres, tales como el ácido linoleico, linolénico, palmítico, esteárico, araquidónico, palmitoleico, gadoleico y behénico, así como los derivados por (de)saturación de los mismos, preferiblemente, ácido palmítico, esteárico, oleico, linoleico, llnolénico, araquidónico; (d) fitoesteroles, tales como β-sitosterol, camesterol, estigmasterol, cicloartenol, sitostanol, campestanol, preferiblemente β-sitosterol, o concentraciones equimolares de sus derivados (conjugados de ácidos grasos libres formando esteres) y sus productos de saturación, tales como los tocoferoles junto con sus isómeros α-vitamina E-, β y γ, y otros tocotrienoles; (e) tirosol y sus derivados procedentes de Ia hidrogenación, tales como el hidroxitirosol [2-(3,4-dihidroxifenil)etanol]. para Ia preparación de un nuevo producto que se administra por vía oral y actúa como:
(a) antioxidante, ya que puede regular Ia oxidación de las LDL que provocan el desarrollo de Ia enfermedad cardiovascular;
(b) regulador de procesos inflamatorios debido a Ia presencia de compuestos inhibidores del factor de transcripción NF-kB, donde dichos procesos se relacionan con Ia aparición y el desarrollo de diversas patologías crónicas, tales como Ia enfermedad cardiovascular, Ia artritis reumatoide, y Ia inflamación asociada a tumores; (c) potencialmente anticancerígeno, ya que puede impedir, disminuir o retrasar el riesgo de cáncer de diversas etiologías.
