Abstract

The invention dissolves the problem method of processing of proteins and protein hydrolysates enriched in exogenous, semi-exogenous and conditionally exogenous aminoacids for production of the preparation of functional food and medical food, used especially in: animal and human food. The essence of the solution is processing of, wherein protein and/or protein hydrolysate in proportion from 1:5000 to 1 : 50, including protein; endopeptidases and/or specific endopeptidases and/or semi specific endopeptidases and/or exopeptidases in mass proportion preferably from 1000:1 to 10:1, in the temperature of 20 to 51°C, or in a temperature specific for the optimal enzyme, in pH from 2 to 7, are mixed with one or more of the following L-aminoacids: LYS, ARG, PHE, TYR, TRP, THT, CYS, GLU, ASP, MET, ALA, VAL, GLY, LEU, ILEU, wherein the recommended etyl groups are in proportion from 1:100 to 1:1, depending on the protein used in the process and aminoacids are in the preferred mass proportion from 1:4 to 1:10 for a particular aminoacid, while the content of the dry mass in preparation is within the range from 10% to 40%. Subsequently, the mixture is diluted with water and pH is adjusted from 2 to 7 with HC1.

1. A method for the manufacture of one or more biologically active peptides, the method comprising the following steps: - Adding one or more specific peptidases to a protein and/or protein hydrolysate forming a mixture
- Subjecting said mixture to a temperature in the range of 20 to 510C, and non-optimal for the specific peptidases.
Subjecting said mixture to a pH in the range of 2.0 to 7.0 or 7.0 to 12.0 and non-optimal for the specific peptidases
2. The method of claim 1 further including the step of
- Adding to the mixture one or more of the amino acids LYS, ARG, PHE, TYR, TRP, THT, CYS, GLU, ASP, MET, ALA, VAL, GLY, LEU, ILEU forming biologically active peptides having hormonal, antibiotic-like, antifuπgal-like, or antiviral-like effect
3. The method of claim 2 where the pH is approximately 2.0 units different from optimal working pH for a particular specific peptidase.
4. A biologically active peptide manufactured using the method of any of the claims 1-3.
