Abstract

La présente invention concerne un procédé et un emballage permettant la coupe et l'emballage de la viande rouge dans une installation centralisée. Ledit emballage comprend une barquette sensiblement imperméable aux gaz contenant un produit, une première pellicule perméable et/ou perforée scellée à la barquette de manière à enfermer le produit, et une deuxième pellicule sensiblement imperméable aux gaz recouvrant la première pellicule, de manière qu'en retirant la pellicule sensiblement imperméable aux gaz, on permet aux gaz de pénétrer dans l'emballage et d'en sortir. L'une des deux pellicules est traitée par décharge corona, et les deux pellicules sont pressées l'une contre l'autre afin de former un stratifié. Le stratifié est scellé à la barquette de manière que la première pellicule est scellée à la barquette et que la deuxième pellicule est scellée de façon pelable à la première pellicule.
