Abstract

A method for increasing the cutting properties of ceramic industrial knives obtained by providing the sharp knife edge (2) with shallow in-grindings (1) in the sharpened edge. The down grinding of local areas along the sharp knife edge can also be perceived as a toothing.

Description

A METHOD FOR IMPROVING THE CUTTING CAPACITY OF CERAMic KNIVES
The invention relates to ceramic knives, which are manufac- tured from zirconium dioxide or other monolithic ceramics or composite ceramics. It is known that the cutting edge sharp¬ ness of ceramic knives has a better durability than that of metal knives. On the other hand it may be difficult to generate better cutting properties at a ceramic knife as compared to a corresponding metal knife. At circular or longitudinal industrial knives (Fig. 1 and Fig. 2, resp.), which have a rotating or linear motion resp., a substantial improvement of the cutting ability is obtained by making regular in-grindings or grooves 1 designed thus that also the groove has a sharp edge at the edge-side 2 of the knife.
If the grooves are made very close to each other the cutting edge may be perceived as toothed. It is suggested that the depth of the grooves are > 0.1 mm. It is suggested that the width of the grooves are ≥ 0,2 mm, and preferably > 0.5 mm.
The cutting properties have been evaluated in tests at a testing rig with zirconium dioxide knives having shallow down grindings. It was not possible to establish any wear at the toothed edge, which must be considered unexpected. The test referred to cutting of cardboard with a 2 kp load on the 50 mm long knife at cutting during a day.
It is expected that knives of this type shall be useful within the food industry, particularly in fish filleting machines and at paper cutting.
