Abstract
In the nutritionally complete enteral diet product the fat content on an energy basis is between 1 and 6 %, the pH value is below or equal to 4.5, and the osmolality is above 360 milli-osmol. This product exhibits a more juicy appearance and juicy taste than the prior art products.
Description
NUTRITIONALLY COMPLETE ENTERAL DIET PRODUCT
The invention comprises a nutritionally complete enteral diet product. In this specification with claims the term "nutritionally complete enteral diet product" is to be understood as an enteral diet product which comprises fat, carbohydrate and protein.
The art comprising nutritionally complete enteral diet products is huge.
Most of these enteral diet products have a pH value around neutrality and thus have to be sterilized, or preservatives have to be added. Reference can be made to the commercial products Ensure (Ross), Osmolite (Ross), and Isocal (Mead Johnson).
Other nutritionally complete enteral diet products have a pH below or equal to 4.5, and thus are more microbially resistant. Reference can be made to European patent no. 0 246 747 and US 4 497 800.
These prior art nutritionally complete enteral diet products do all possess a milky appearance , i.e. they look like milk, but even so they do not necessarily taste like milk, but may have an acid juice like taste.
During the last years a trend among the consumers, i.e. the patients, has been developed in direction of a preference for a more juicy and less milky appearance, and for at correspondingly juicy taste. Thus, there is a need for a nutritionally complete enteral diet product with a more juicy appearance and a juicy taste.
The nutritionally complete enteral diet product according to the invention is characterized by the fact that the fat content is between 1 and 6% on an energy basis, and that the pH value is below or equal to 4.5, and that the osmolality is above 360 milli-osmol. All nutritionally compatible protein (whereby the term compatible protein in this specification with claims comprises for instance whey proteins and protein hydrolyzates), carbohydrate and fat sources (including for instance the emulsifier described in co-pending Danish patent application No. 6575/89, filed on the same date as this application) and usual auxiliary agents can
be used in the nutritionally complete enteral diet product according to the invention.
Surprisingly, it has been found that the appearance of a properly formulated, nutritionally complete enteral diet product with a normal fat content around 30% on an energy basis and a pH value below or equal to 4.5 changes from milky to juicy, i.e. to a more transparent appearance, when the fat content, on an energy basis is reduced to a value in the interval from 1 to 6%. Also, there is ample "room" for aroma substances due to the fact that the osmolality of the diet product is above 360 millimol, and thus, a juicy taste of the diet product according to the invention is easily achieveable.
Nutritionally complete enteral diet products with a fat content on an energy basis between 1 and 6% belong to the prior art, examples being Criticare (Mead Johnson), Vivonex Standard (Norwich Eaton), and Vivonex T.E.N. (Norwich Eaton). All these prior art products have a milky appearance and an unsatisfactory taste, and also, they exhibit a pH value above 4.5, with the accompanying disadvantages already pointed out.
Also, from the applicant's European patent no. 0 246 747 a nutritionally complete enteral diet product is known with a pH value below or equal to 4.5 and a fat content on an energy basis of between 3 and 60%. However all exemplified products have a milky appearance, and no examples are presented with a fat content between 3 and 6% on an energy basis. Also, the known diet products exhibit an osmolality below 350 milliosmol, and thus, there is no "room" for major amounts of aroma compounds.
A preferred embodiment of the diet product according to the invention is characterized by the fact that the fat content on an energy basis is between 4 and 6%, and that the pH value is in the range of between 3.0 to 4.3. This product exhibits a pronounced juicy appearance and a pronounced juicy taste, when properly flavoured.
A preferred embodiment of the diet product according to the invention is characterized by the fact that the caloric density of the diet product is above 0.68 Kcal/ml. In this manner more valuable nutritionally diet product is obtained.
The product according to the invention is illustrated by the following examples. Both the product according to Example 1 and to Example 2 exhibit a marked juicy appearance and a marked juicy taste. Furthermore, the product inside the scope of the invention according to Example 3 exhibits a marked juicy appearance and a marked juicy taste.
EXAMPLE 1
A diet product is prepared according to the following formula:
Composition for 100 ml
Protein: Soy protein hydrolysate (N x 6.25) 3.75 g Carbohydrate: Maltodextrins 20.00 g Fat: Soy bean oil 0.60 g
Water to 100 ml
For the preparation of one liter of product the procedure is as follows:
Constituents: I Citric acid 5.000 g
Aspartame 0.500 g
Ascorbic acid 1.000 g
Vitamin premix 0.1 g
Fresh orange extract 10.0 g Orange concentrate (5:1) 10.0 g
Orange flavour 0.5 g β-caroten 1.5 g I Soy protein hydrolysate (in an amount corresponding to 37.5 g protein) 37.5 g Water 200 g
III Maltodextrin 200 g Pectin 0.40 g Demineralized water 400 ml
IV Soy bean oil 6.0 g V Demineralized water to 1000 ml
Production Procedure:
I is dissolved in II. pH is measured to pH 4.3. Maltodextrin and pectin are dissolved in water by heating to 50" C. Ill is mixed with I + II and IV is added. Finally water (V) is added to a total volume of 1000 ml. The product is homogenized on a high pressure homogenizer (Rannie - type 8.30 H). The product is filled in a suitable package and stored at 4βC.
For the preparation of one thousand litre of a similar, enriched product the procedure is as follows:
Constituents I Citric acid 5000 g

Vitamin premix 100 g
Fresh orange extract 10 kg Orange concentrate (5:1) 10 kg
Orange flavour 500 g β-caroten 1500 g

Production Procedure:
I is dissolved in II. The pH value was 4.3. Maltodextrin and pectin are dissolved in water by heating to 50 βC (III). Ill is mixed with I + II and IV is added. Finally water (V) is added to a total volume of 1000 I. The product is pre-homogenized on a low pressure homogenizer, pasteurized at 85 "C for 4 seconds and finally homogenized at a pressure around 250-350 kg/cm2 at a temperature of 60° C. The pasteurized, homogenized product is collected in a sterile storage tank. The product is filled in a suitable package under aseptic conditions and stored at 4°C.
EXAMPLE 2
A diet product is prepared as in Example 1 except that the soy bean oil is replaced by safflower oil (4.0 g of safflower oil replaces 6.0 g of soy bean oil).
EXAMPLE 3
The enteral diet product, top up Special Formula, according to the invention, prepared as indicated in Example 1 , has been compared to the commercial enteral diet product, top up Pineapple (European Patent No. 0246747), considered to be the prior art product most related to the product according to the invention.
The two types of products have been tested both in a ranking test, using hospital staff as judges, and in a patient acceptability test, where the patiens were served the product for 3 days and asked whether they found it juice-like or not. The results of the two tests are given in Tables 1 and 2.

Thus, the enteral diet product according to Example 1 , top up Speci Formula, from a taste point of view, is significantly better (α<0.01) than th commercial enteral diet product, top up Pineapple.

Thus, the enteral diet product according to Example 1 , top up Special Formula, is considered a juice-like product (α=0.01), whereas the commercial product, top up Pineapple, is not even on the 5% level considered a juice-like product.
Claims
1. Nutritionally complete enteral diet product, wherein the fat content on an energy basis is between 1 and 6%, the pH value is below or equal to 4.5, and the osmolality is above 360 milli-osmol.
2. Diet product according to Claim 1 , wherein the fat content on an energy basis is between 4 and 6%, the pH value is in the range of between 3.0 to 4.3, and the osmolality is above 400 milli-osmol.
3. Diet product according to Claim 1 or 2, wherein the caloric density of the diet product is above 0.68 Kcal/ml.
