Abstract

Mechanisation of the manual work of a person for preparing saute -or assimilated- dishes. There is provided an automatic machine with variable programs. Practically, to prepare a dish amounts to turning the button of a timer. The machine comprises in general a plurality of (electrically and mechanically) independent units mounted on a fixed frame comprising a platen drilled with holes. The figure 2 represents a model with three units. On top of each unit, there is provided a pan receiving the composition of a dish or water for washing; above the pan, a mixer rotates almost horizontally. The pan may take two final positions, either horizontal or skewed; the latter position of the pan is used for pouring the composition of a prepared dish into a plate to be placed on the platen or for emptying washing water.

MACHINE A CONFECTIONNER DES PLATS SAUTES MACHINE FOR MAKING SKILLED DISHES
DE LA CUISINE ASIATIQUEASIAN CUISINE
La machine est utilisée pour la confection des plats sautés, c'est-à-dire dont la composition ( légumes, viandes, crustacés , etc... ) est coupée en petits morceaux. Elle permet de mélanger la composition dans son volume même, sans l'écraser . Parmi les asiatiques , les chinois sont, en général, les meilleurs spécialistes des plats sautés. Un cuisinier chinois (s'il est droitier ) est celui qui, après avoir mis la composition d'un plat dans une poêle sur une source de chaleur, prend une louche à la main droite pour mélanger, tandis que la main gauche tient le manche d'une poêle pour balancer de temps en temps la composition en l'air, puis la recevoir ensuite dans la poêle après sa chute, de manière à l'étaler sans l'écraser. Ce geste acrobatique , fatigant et fastidieux est néanmoins nécessaire pour faire un bon plat sauté, c'est-à-dire pour éviter de transformer un plat sauté en un plat de purée. ( Bien que la purée soit un bon plat ). On ne lave que rarement les poêles en y mettant de l'eau , mais on les essuie à l'aide du papier , car les poêles sont traitées d'une couche anti-adhésive .La poêle a une forme ressemblant à une portion de la coque d'un oeuf coupée suivant le sens longitudinal : longueur 30cm , largeur 22cm , hauteur 7cm . Claims

REVENDICATIONS
1. Machine à confectionner des plats sautés caractérisée en ce qu'elle comporte des moyens pour laver la poêle , pour mélanger progressivement son contenu , pour régler la cuisson à volonté et pour verser le contenu dans une assiette posée à l'avance .1.
