varying size, and certain pans or longitudinalreoeptacles, located in a close box, and designed for the reception of articles of food to be cooked by the'direct action of steam in the former, and by the indirect action thereof in the latter, or by the heat emanating from the steam, which cooks the food in the colanders.
Description of the Accompanying Drawings. Figure 1 is a plan view, with'the colauders removed,
and the upper lid thrown back, and the lower lid raised.
Figure 2 is alongitudinal view, with one side broken away, to show the stands and colandcrs.
A is a box or receptacle, which is made, preferably, of quadrilateral shape, and provided with the lid 0., and auxiliary cover or heater (1, which latter is hinged to the top of the main lid aforesaid, and closes tightly thereon, the pivotal piece or catch f, in connection with the metallic arch g, being employed to secure it closely thereto.
The flange h on the box, and the flange i on the lid thereof, may be made of wire, encircled by metal, or in any ordinary way, to make a closely-fitting lid, to prevent the escape-of steam.
P is a catch, for securing in position the lower lid.
The box aforesaid has located therein, at the lower part thereof, a pipe, K, provided with a stop-cock, and one also at the upperpart thereof, L, which is also provided with a. stop-cock or valve. The pipe K, at the lowerpart of the box, is designed to admit the outflow of the water or condensed steam collecting therein, and the pipe L, located near the top of the box, is designed to admit the escape of steam, when desirable.
B is a longitudinal steam-pipe, located immediately beneath a series of colanders, the steam being supplied to the longitudinal pipe by the transverse or supplypipe M, which latter connects with or is attached to the former at a point equidistant from the two ends thereof.
The supply-pipe M is provided with a valve or stopcock, wherewith to regulate the admission of steam, and the longitudinal pipe B is provided with a series of valves or stopcocks, represented by W, located in small pipes connecting therewith, and projecting vertically therefrom, and immediately beneath a series of colanders, which are designed for the reception of the article or articles to be cooked.
O C C O are stands, which are rigidly attached to the bottom of the box. They are similar in construction, but, preferably, of varying size. They have, located in the four corners, and near the top thereof, horizontal metallic projections T, forming a platform for each colander, just above the steam stop-cocks or valves aforesaid.
g D D D D represent a series of colanders, adapted, by size, to fit the stands aforesaid. Theyarc provided with handles, and may have closely-fitting and fastening lids, when it is desirable to economize the quantity of steam employed.
