.To all whom, it may concern:
Beit known that we, WILLIAM McGIvEN, .ALvIN L. NICHOLS, and GEORGE DARNELL, citizens of the United States, residing at Grove City, in the county of Franklin and State of Ohio, have invented a certain new and useful Improvementin Cheese-Knives, of which the following is a specification.
Our invention relates to improvements in 1o knives for cutting cheese, and is particularly adapted for the use of the retail dealers therein; and the objects of our invention are, first, to produce a simple, cheap, and effective cheese-cutting device, so constructed as to admit of au even vertical cut being made from the center to the edge of the cheese at any desired point therein; second, to lessen the difficulty usually incurred in cutting the cover of a cheese. in which position it may be held firmly by grasping with the left hand a short handle, f, 6o which is made to project from one side, and near the top of the sheath, at right angles therewith, while the remaining hand may, by grasping the handle lz', be employed to press down the knife blade through the cheese, which may be revolved until the place desired to be cut is reached.
In case difficulty is experienced in severing the covering of the cheese, the knife may be drawn inward and outward with asawing mo- 7o tion until the tough portion is cut. This sawing motion is made possible by having the slot d, through which the pin passes, in the knife-blade.
ln case it is found that the knife tends to Waver or bend in its downward course, we provide a metal guide-rod, b, which has its middle portion, which is slightly cut away on its front side, fitted into a notch cut in the upper end of the sheath. This rod extends 8c transversely above the cheese-box until slightl y beyond the sides of same. lts ends are then bent downward at right angles, and its eX- treinities secured by a screw or otherwise to the table or board e. The side of the knife may be pressed against this 'guiderod during its downward course, and thus prevent its wavering or bending.
Ve are aware that prior to our invention ya knife has been used, pivoted within a slotted sheath, and that knife-blades have been provided with slotted ends for pivoting the saine. We do not therefore claim these points,broadly.
