The chocolate or other confectionery retains thereby its natural color and .assumes a permanent solid state. The combination of a closed air-cooling box, ,lin the same, a cold-water tank connected 'to a number of refrigerating chambers or cabinets, an air-forcing apparatus, a distributing-chamber connecting the coolingbox with the cabinets, and channels for connecting the air-'forcing apparatus with the cooling-box and the drying-chambers, substantially asset forth.
