SPECIFICATION forming part of Letters Patent No, 313,975, dated March 17, 1885.

I all whmn it may concern! Be it known that I, \VILLIAM H. AUSTIN,

' a citizen of the United States, residing at paratus of this character which shall be cheap and simple in its construction, effective in its operation, and strong and durable.

With these ends in view the invention consists in theirnproved construction and combinations of parts, hereinafter fully described, and pointed out in the claims.

.In the drawings, Figure 1 is a perspective view of my improved apparatus with the dome raised; and Fig. 2 is a longitudinal vertical section of the same having the cover or dome closed down.

In the accompanying drawings, in which like letters of reference indicate corresponding parts in all the figures, A represents the furnace which is preferably constructed of brick, and is provided with a door, B, at its forward end.

Within the furnace A, a short distance from the rear end thereof, is provided a fire-wall, C, which is attached to the bottom of the furnace, is carried upwardly a short distance, and is then bent rearwardly, and bears or rests against the rear wall of the furnace.

Upon the upper side of the furnace, near the rear end of the same, is provided a hole or opening, in which hole or opening is seated a smoke-escape pipe, D.

Upon the upper side of the furnace, near the forward end thereof, is provided a hole or opening, in which hole or opening is seated a pan or vessel, D, said pan or vessel D extending down into the furnace. A cover, Efprovided with a series of perforations or openings, is fitted over said vessel, as shown, and is adapted to support the cans or jars of fruit which are placed thereon.

F represents ways, which consist of two upright rods or standards connected at their upper ends by a cross-piece, which may be formed integral therewith or secured thereto. The

ways F are arranged upon opposite sides of the perforated top or cover, and the upper cross or connecting piece is located on a line with the middle of the same.

Upon the under side of the cross-piece connecting the uprights or standards composing the ways F is a pulley, b, which is mounted in a suitable bracket, 0.

G represents a cover or dome, which is of a height sufficient to accommodate jars and cans, which, as before stated, are placed upon the perforated cover, and are adapted to be entirely inclosed by the said dome or cover G. The dome or cover G is provided upon its sides with diametrically-opposite guides or loops 6, which fit upon the uprights or standards of the ways F and slide thereon, but prevent the detachment of said dome or cover from the ways.

At a suitable distance from the furnace is provided a supportingframe, H, in which is journaled a drum,f, having a crank-handle,

g, and provided with a toothed wheel, 71, adapted to be engaged by a pawl or detent, 2', pivoted to the supporting-frame. A cord, j, connects the top of the cover or dome with the drum, said cord passing up through the pulley b.

The operation is as follows: WVater is placed in the pan or vessel, and the steam generated passes through the perforated cover or lid. The jars or pans are placed on said cover or lid, and the cover or domeGlowered by means of the Windlass, said cover or dome entirely inclosing the cans or jars. The cans or jars are allowed to remain inclosed by said dome for about thirty minutes. If glass jars are used, the dome is raised about an inch, or a sufficient distance to allow the escape of steam gradually, and the gradual cooling of the jars, thus preventing the possibility of the same being cracked or broken by sudden exposure to the air. In the case of metal cans the dome may be entirely raised or elevated, and the cans removed.

The apparatus above described is simple in its construction, effective in its operation, and strong and durable.

Having fully described my invention, whatI claim as new, and desire to secure by Letters Patent, is-

1. In fruit canning apparatus, the combination, with a heating-furnace, of a vessel, a lid having a series of openings, and a dome adapted to be lowered to cover the top ofsaid vessel and lid, as set forth.

2. In fruit canning apparatus, the combination, with a furnace having an opening on its under side near the front end thereof, of a vessel fitting in said opening, aperforated lid for the same, and a dome adapted to fit over said lid and the top ofthe vessel, as set forth.

3. In fruit canning apparatus, the combination, with a furnace, of a vessel, a perforated lid for the same, a dome, a Windlass, and a cord connecting said dome with the drum of the Windlass, as set forth.

4. In fruit canniugapparatus, the combination, with a furnace, of a vessel, a perfo rated lid for the same, a dome, a pulley mounted above the furnace, a Windlass lo- 1 catcd a short distance from said furnace, and a cord connecting the dome with the drum of the Windlass, as set forth.

5. In fruit canning apparatus, the combination, with a furnace having a vessel let into the same, and a perforated lid for said vessel, of ways F, located above the furnace, a dome having guides adapted to fit the uprights of said ways, a pulley, a Windlass, and a cord connecting the drum of the Windlass with the dome, said cord passing through the pulley, as set forth.
