My invention relates to new and useful improvements in the art of evisceration of animals, an object of the invention being to provide a device of the character herewithin described whereby the cutting of the brisket bone is facilitated, particularly when the animal is suspended from the conventional rail.
Another object of my invention is to provide a device of the character herewithin described which incorporates a shroud thereby preventing the cutting blade from puncturing the stomach of the animal during the sawing operation.
Another object of my invention is to provide a device of the character herewithin described which incorporates means for sterilizing the blade and shroud readily when desired.
A still further object of my invention is to provide a device of the character herewithin described which may be actuated mechanically, electrically or pneumatically.
Another object of my invention is to provide a device of the character herewithin described 'which is economical in manufacture, simple in construction, and which adds materially to the speed of the evisceration at the same time relieving the operator of considerable physical strain.
With the foregoing objects in view, and such other objects and advantages as will become apparent to those skilled in the art to which this invention relates as this specification proceeds, my invention consists essentially in the arrangement and construction of parts all as hereinafter more particularly described, reference being had to the accompanying drawings in which:
Figure 1 is a perspective view of my device.
Figure 2 is a side elevation of my device with the cover plates removed to show the mechanism therein.
Figure 3 is a top plan view of my device.
Figure 4 is an enlarged sectional representation of my device viewed along the lines 4-4 in Figure 2 but showing the cover plate in position.
Figure 5 is an enlarged sectional representation of my device viewed along the lines 55 in Figure 2 but showing the cover plate in position.
In the drawings like characters of reference indicate corresponding parts in the different figures.
In the process of evisceration of animals, considerable difficulty has been experienced in cutting the brisket bone, particularly under present day methods wherein the animal is suspended by the hind legs from a moving rail. Under these circumstances the brisket bone has to be sawn from a point adjacent the stomach proceeding downwardly towards the neck, and it will be appreciated as soon as the bone begins to separate then the stomach of the animal gravitates towards the neck thereby enveloping the saw blade. It will be realised that under these circumstances the risk of puncturing the stomach with the saw exists with the subsequent possibility of contamination spoiling the flesh by the stomach contents.
Due to the relatively hard consistency of the brisket bone, the operator is under considerable physical strain if this operation is carried out with a conventional hand saw, and it will be appreciated that it is extremely difficult to provide an efficient shroud for a saw of this nature. Consequently I have designed the novel brisket saw hereinafter to be described which may be driven mechanically, electrically or pneumatically and which incorporates a novel shroud which gives full protection to the blade thus eliminating the possibility of puncturing the stomach.
Upon reference to the accompanying drawings, the device will be seen to comprise the motive unit I or prime mover, the transmission system 2, the saw blade 3 and the blade shroud 4. In this embodiment the motive unit comprises an electrical motor contained within the substantially cylindrical casing 5 which is provided with the two upstanding curvilinear flanges 6 whereby the unit may be suspended from a convenient location adjacent the moving rail. A series of aligned drillings l are provided approximately parallel to the uppermost edges of the flanges, any pair of which are engagea'ble by the suspension pin 8 thereby permitting the balance of the unit tobe adjusted. The ring 9 encircles the pin 8 and is suspended from the chain and hook assembly Hi.
The conventional pistol grip assembly II is bolted to the rear of the power unit cylinder and the trigger assembly 12 makes and breaks the power supply to the motor entering via the cable l3. The unit may be steadied and controlled by this pistol grip in conjunction with the handle I 4 which extends outwardly from the lower flange extension M of the casing.
The armature shaft I5 of the power unit extends into the transmission case IS, the configuration of which is clearly shown in Figure 2, and has the crankshaft l6 journalled for rotation thereon, being held in place by the nut II. The crankshaft I6 is provided with the offset crankpin l8 to which is attached the relatively large end IQ of the connecting rod 20 by means of the nut 21. The crank pin [8 and-the end [9 should of course be provided with a simple bearing therebetween, and the static balance of this assembly is maintained by the offset counterweight '2! provided on the side of the crankshaft opposite to the aforementioned crank pin.
The connecting rod 20 extends forwardly within the casing l5 and is connected to the sleeve 22 which reciprocates between the two V'--guides 23 attached to the casing 24 by means of the bolts 25. In this connection it is to be noted that the lower V-guide specifically designated 26 is adjustable vertically by means of the bolts 2'! in order to eliminate undesirable vertical movement of the reciprocating sleeve. Lubrication to this portion of the assembly is provided by means of the conventional sight-glass lubricator 28, the'lubricant passing by gravity down the tube 29 tothe oil drillings and cuts 29' formed in the upper V-guide 23.
Attached to the distal end 30 of the reciprocating sleeve 22 by means of the. bolt 30' is. the
brisket saw blade 3 which extend s forwardly' between the nose of the casing 3| and the nose plate 32 as clearly shown inFigure. 4 of, the ac-- companying drawings.
The blade 3 is provided with the cutting teeth 33 on the lowermost edge thereof and it will beseen from Figure 2;that-.the;distal end .34; tapers progressively upwardly: towardssthetip which is Theupper contour. 38: or the shroud. extends forwardly and upwardly to form the, rounded apex 38' substantially towards the: forward end thereof, and thendescends: relatively-sharply to terminate in the curved nose piece: 311 having what I designate'as a'snub-nosed contour. This configuration facilitates the entry of the brisket saw and at the same time prevents the stomach drilling, corresponding outlet ports 49 convey steam to the opposite side of the shroud and saw assembly. The steam issues from these outlet ports under considerable pressure and extends the full length of the shroud and blade thereby effecting efiicient sterilization and at the same time removing anyfiesh and bone dust which may be adhering thereto.

Consequently I have-incorporated a sterilizing device which consists essentially of the steam valve 39 situated-just forward" of the power unit I' and actuated; via thefiexiblecable 40, by the finger controlbutton 4i attached to the aforementioned pistol grip assembly, ll. What I. claim as. my invention is:-

A power driven brisket saw, comprising in combination with'a. prime mover, av casing surrounding the same, a reciprocating short-stroke saw-blade operably connected to said: prime mover, a cutting edge on said saw-blade and a shroud connected to said casing,.and'flanking said V combination with a prime" moverja. casing surrounding the same, a reciprocating short-stroke saw-blade operably connected to said prime mover, a cutting edge on said saw-blade and-a shroud connected to said casing, and flanking said blade, said blade having a cutting edge which tapers toward the opposite edge at the distal end" of the blade,- the dimension of said shroud on any linedrawn therethrough normal to the major axial plane being relatively slender, saidshroud being longitudinally slotted t'o pe'r'mit of the projection of said cutting edge therethrough, the distal end of said shroud being of snub-nosed contour, the contour ofsaid shroud when in situ and observed-in side-elevation inclining from said distal end upwardly to a rounded apex and from thence descending in a slower gradient towards the attached end WILLIAMJQHN mNeKs.
