' plete description of my invention.
So far as my knowledge extends, no butchers steels have heretofore been provided with means for, finishing or polishing the edge of a knife, although various styles of cutting or abrasive surfaces have been devised for sharpening.
To afford a capacity for polishing an edge after the operation thereon of the cutting-surface of the steel is the object of my invention, provided with the oppositely-located cutting-surfaces, and two oppositely-located smooth or finishing surfaces.
To more particularly describe my invention I will refer to the accompanying drawings, in which- I a Figure 1 is a side view, and Fig. 2 a crosssection, of one of my novel steels.
The surfaces a are roughened in any of the well-known styles, so as to operate as cuttingsurfaces when stroked with a knife in the usualmanner. The surfaces 12 are smooth, and the steel being hardened, they operate successfully in well finishing an edge which has been attained with the cutting-surfaces. The cutting and the finishing surfaces are each oppositely located, in order that whichever operation is performed, the knife may bepassed from side to side alternately, in a manner well known.
Having thus described my invention, I claim as new and desire to secure by Letters Patent- A butchers steel provided with two oppositely-located cutting or abrasive surfaces and two oppositely-located smooth, polishing, or finishing surfaces, substantially as described.
