This invention relates to machines for winding and forming plate meat into rolls of convenient form for roasting and serving, and the principal object is to provide a machine in which the meat may be quickly and tightly wound around a shaft and held securely while the fastening cords are secured or skewer inserted to hold the roll together.
It is also an object to provide a meat roll machine in which the forming pressure may be regulated and released and the shaft re moved from the machine to permit the roll to be taken. out, without affecting the shape of the formed roll.

More specifically in the drawings numeral at indicates the side walls of a casing having a top 5 and base 6, intermediate of which is supported the squared shaft 7 adapted to pass through square roached bushings preferably provided with ball bearings in the bearing casing 8 secured in the end walls, the shaft being turned by the hand crank 9 or provided with power connections 'as desired, a shoulder 10 limiting the inward movement, a bore outside the casing on the other end of the shaft being adapted to receive a suitable pin 11, to secure the same in position.
To impale the meat on the shaft, hinged spikes 12 are provided that swing in slots recessed in the shaft, so that the spikes may lay down within the compass of the shaft when it is inserted or withdrawn through the squared bushing, the spikes being forced out into the engaging position by a coiled spring 14 with one turn around the hinge pin 15, one end 16 of the spring being bent and seated in a bore in the spike, and the opposite end 17 secured in the side of the slot.
To form the roll as wound when the shaft is turned clockwise pressure for-mine plates 18 are provided preferably two rows, one
accompanying this speciabove and one below the shaft, these plates being curved from front to back and are spaced apart so that cords maybe passed around the completed roll at spaced intervals. Each former plate is supported on tubular guides 19 that are vertically 1novable in the horizontally disposed plates 20 and 21, the latter being movable and shown as guided in vertical slots 22 in the side walls by studs 23 preferably formed on the ends of the plates 21, the adjustment of this plate being controlled by the screws 25, threaded in bosses 26 secured to the fixed plate 20, and swivelled in the bosses 27 secured t0 the plate 21, so that pressure of the encircling springs 28 around the tubes 19, also pressing on the formers 18 may be released to remove the roll and also adjust the pressure of the springs as necessary.
To provide proper guiding of the formers, laterally, slots 29 of proper length are cut in tubes 19 and rods 30 are passed therethrough in line and secured to the plates 20, so that the proper movement away from the shaft is permitted, and their approach limited, the rods being cut away to clear the bosses 26 and secured to the plate by bolts 31.
W hen the meat is wound on the shaft as described and formed into a pressed roll, fastenings are made, the tension on the screws 24 relieved, the pin 11 removed and the shaft pulled out to the right, the spikes turning to the left and slide out with the shaft through the bushing, and the formed roll of meat removed from the front of the machine by hand.

5. A meat roll forming machine comprising a frame, a shaft revolvably mounted therein, meat hooks on said shaft, roll forming members resiliently mounted adjacent said shaft, and means to change the tension of said resiliently mounted forming members.
6. A meat roll forming machine comprising a shaft, means to secure meat to said shaft, means to revolve said shaft, pressure forming plates mounted adjacent said shaft, means to guide said forming plates and means to adjust the pressure applied to said forming plates.
7 A meat roll forming machine comprising a slotted shaft hinged meat spikes mounted in the slots of said shaft, means to revolve said shaft meat forming plates in spaced relation to said shaft, pressure means to press said former plates toward said shaft, and means to release the formed plates from in contact With meat Wound on said shaft.
