GANNING APBARATUS.

To all whom it may concern:
Be it known that 1, JOHN R. WVonsrrAM, a citizen of the United States, residing at Dothan, in the county of Houston and State of Alabama, have invented certain new and useful Improvements in Canning Apparatus, of which the following is a specification.
This invention relates to a canning apparatus and the principal object of the invention is to so construct the same that the cooking vat and exhausting vat may be connected with the boiler, the pipes leading from the boiler to the exhausting vat and cooking vat being provided with controlling valves so that the circulation may be collectively directed either through the cooking vat or through the exhausting vat.
Another object of the invention is to provide a canning apparatus which will be composed of a few number of parts and thus being comparatively simple in construction and cheap to operate and keep in proper condition.
Another object of the invention is to provide a canning apparatus which is so constructed that it will be strong and durable and not liable to easily get out of order and need repair.
This invention is illustrated in the accompanying drawings, wherein 2- Figure 1 is a view showing the canning apparatus in front elevation. Fig. 2 is a view showing the canning apparatus in top plan with the furnace shown in section.
The exhausting vat 10 is positioned upon one side of the furnace 11 and the cooking vat 12 is positioned upon the opposite side of the furnace 11. These vats 10 and 12 are supported by the legs or standards 18 which will be of sufficient height to hold the vats at the desired height from the ground.
The pipe 14 and the pipe 15 are connected with the two couplings 16 which communicate with the pipe 17 communicating with the boiler 18 at one end thereof and are provided with valves 19 and 20 so that the passage of fluid through the pipes 14 and 15 may be controlled. The pipe 15 communicates with the cooking vat 12 and the pipe 14 communicates with the exhausting vat 10 and terminates in a perforated pipe section forming a nozzle 21 extending from one end of the vat to a point past the center thereof as shown in Fig. 2.

The pipes 22 and 23 which are provided with controlling valves 24 and 25 are joined by the T-coupling 26 which communicates with the pipe 27 extending to communicate with the boiler 18 at the opposite end from the pipe 17. It should be noted that the pipe 17 communicates with the upper portion of the boiler whereas the pipe 27 communicates with the lower portion. These pipes and 23 communicate with the cook ing vat and exhausting vat, the pipe 22 terminating in a perforated pipe section 28 providing a second nozzle similar to the nozzle 21 but entering the exhausting vat from v the opposite end and extending in overlapping relation to the nozzle 21. It will thus be seen that thisapparatus simply comprises the two vats 10 and 12 which are connected with the boiler 18 by the valve controlled pipes 14;, 15, 22 and 23.
It should be noted that by having the perforated pipes 21 and 28 extending into the exhausting vat in overlapping relation and upon opposite sides of the longitudinal center of the vat, a better circulation will be obtained, the hot water being fed into the vat to one side thereof and the cooler water being drawn out of the vat upon the opposite side of the vat. Therefore hot water will be fed into the vat throughout the greater portion of its length and the cooler water will be drawn out of the vat throughout the greater portion of its length.
When using this apparatus the two vats will be filled with water and the boiler may be filled from either one of the vats or water may be drawn from both vats if it is desired to rapidly fill the boiler. When it is desired to have a circulation of steam and water through the exhausting vat the valves 20 and 25 will be closed and thus the circulation will be permitted from the boiler to the exhausting vat and back again to the boiler through the pipes 14 and 22. If it is desired to have the circulation between the cooking vat and boiler the valves 19 and 24 will be closed and the valves 20 and 25 opened and the circulation will then be from the coo-king vat to the boiler and back again through the pipes 15 and 23. After the vats have been filled with fresh clean water and the boiler filled from these vats through the medium of the pipes the fire will be started in the furnace to heat the water in the boiler. The prepared fruit or vegetables which are to be canned will then be placed in the empty cans and water poured into the can to fill the space not occupied by the fruit. The usual caps will then be applied to the cans and soldered into place after which the cans will be placed in the exhaustwill now be placed in the cooking vat which is now filled with boiling water provided by means of the circulation already described and allowed to remain there until they have been cooked a sufficient length of time. After the cans are removed from the cooking vat they will be placed in cold water to overcome the expansion caused by the heat of the cooking vat and the canning process is then completed. 1
