This invention has reference to an improved process for canning crabs,'lobsters, and the llke, wh ch conslsts in first stripping oil the shell or carapace and -termi-.
nally operating upon each leg of the said crabs, lobsters, and the like, provided such operation should be performed While they are still living, so as to'cause the blood and lymph circulating thereof to flow out spon-' taneously through the point or points of operation, and subsequently treating the same in the manner usually practisedin the crustacean canning industry; and has for its ob ect to render the process more eX- peditious, considerably cheaper and more reliable in eitect \vlthout havmg the-d1sadvantage of discoloring the productsthat. are,

This is due to the sulfu'rous matter contained in the blood coagulating with the flesh'of such lobster-crustacean.
