Abstract
The invention relates to a method for pasteurizing or sterilizing the oilseed surface. The method includes basic treatment which starts after preliminary heating of food products only. In doing so the temperature of a product is lower than the evaporating temperature of the pasteurizing or sterilizing systems by several degrees, and the temperature of preliminary heating is lower than the steam saturation temperature at the preset pressure by several degrees. In doing so the treatment is carried out in a moist environment without air, the pasteurizing is carried out at a temperature within the ranges of 55-99 °C at a low pasteurization pressure, and the sterilizing at a temperature within the ranges of 100-140 °C at higher sterilization pressure, the heat treatment is carried out over the time from 1 to 30 minutes, and, as a result of the further vacuum drying at yet more lowered pressure, the condensate water is evaporated.
