Abstract
A method of thermal sterilization of meat products by means of heating thereof in a hermetic metal package of cylindrical form in a medium of superheated water vapour under the pressure and keeping at a temperature of the medium according to the preliminary calculated sterilization conditions for achieving the sterilizing F-Ñffect, in which, according to the invention, the optimum sterilization conditions are determined additionally, taking into consideration the coefficient of assessment of the organoleptic properties and the food value of meat products.
