Відомо спосіб консервування перцю солодкого, за яким відповідно до технічних і біологічних вимог відбирають сировину, миють, очищають, подрібнюють, а потім бланшують, для надання плодам еластичності й швидко охолоджують холодною водою. Далі готують маринад; для чого додають у гарячу воду сіль, цукор і оцтову кислоту і за температури не менше 852С заливають ним підготовлену сировину, яку розфасовано у скляні банки. Наповнені банки закорковують та поміщають у автоклав для пастеризації за режимами: температура 1002С, тиск 118-147кПа (Технологічна інструкція щодо виробництва консервів "Овочі мариновані" ТІ У 46.72.6-951|.There is a known method of canning sweet pepper, according to which, in accordance with technical and biological requirements, raw materials are selected, washed, cleaned, crushed, and then blanched to give the fruits elasticity and quickly cooled with cold water. Під час зберігання продукції вказаним способом мають місце процеси окислювального характеру, а продукт, отриманий даним способом, перед вживанням в їжу вимагає кулінарної термічної обробки, яка руйнує вітаміни, пектинові й фенольні речовини, що складають біологічну цінність продукту.
