Abstract

The present invention provides a manufacturing method of tea extract solution which is capable of stably passing the fluid without obstruction and has higher extraction efficiency on non-polymer catechin class as well as higher transparency without miscellaneous odors while using a spray type column extracting machine. The manufacturing method of tea extract solution of this invention comprises of adding tea leaves and water or hot water into a column type extraction machine according to a ratio of B/A of 0.8 to 3.3 where A is the height of tea leaves and B is the height of water or hot water, supplying water or hot water from the top of the column, adjusting a ratio of C/A of 0.8 to 3.3 where C is the liquid height and A is the height of added tea leaves while the extract is dripping out from the bottom of the column.
