Abstract

A food additive composition comprises: 100 parts by weight of a synthetic dolomite compound which is represented by the general formula Ca1-xMgxCO3 and satisfies the relationships (a) 0.01 ≤ x ≤ 0.50, (b) 10 ≤ Sw1 ≤ 500, and (c) 2.88 ≤ α ≤ 3.00; and 0.1 to 500 parts by weight of at least one member selected among emulsifying agents, stabilizers, polysaccharides, oligosaccharides, amino acids, sugar alcohols, and fused phosphates. In the relationships, Sw1 is the BET specific surface area (m2/g) and αis the lattice spacing between (104) planes determined with an X-ray diffractometer. The food additive composition is excellent in redispersibility in liquids and long-term dispersion stability in foods. When added to a food, the food additive composition can give a food composition having an excellent flavor.
