Abstract

Sucuk food is an alternative natural diet for dogs. With these products prepared in the form of sausage, natural home-type diets that can remain intact for a long time are provided. Sucuk foods were prepared by filling the intestines and maturing of animal and vegetable products and kept at +4°C (refrigerator) for 6 months. Nutrient and bacterial analyzes were carried out at regular intervals. At the end of the 6-month period, healthy foods with sufficient nutrient content were obtained. The subject of organic and natural feeding, which has attracted attention among people in recent years, has also become popular in the nutrition of pet animals, especially dogs. Dog owners want to feed their dogs with diets that they know the content and prepared with natural products. Preparing a homemade diet is time consuming and costly, and preparing a balanced diet is very difficult. Websites often offer unscientific diets based on dog-loving foods. If the prepared diets are not consumed daily, they must be frozen and stored. It is also a waste of time to melt it and feed it as much as the dog needs. The sausage foods obtained are very practical and scientifically proven products to use. These manufactured products were first projected by the Selcuk University BAP coordinator and the project was supported and concluded with success. With this preliminary project, the digestibility level, nutrient content, energy level, consumability, shelf life and microbiological safety of sausage foods prepared with different ingredients were determined in dogs. As a result of the literature research, no similar product has been found in the world. In foreign countries, there are products similar to salami for dogs. These are products that dogs love but are quite expensive. In addition, they are products for which there is no scientific study about whether they are balanced and sufficient in terms of nutrients. Fermented meat products sold for dogs are completely in the form of treats. They are not products that will meet their daily needs. They are snacks given as food or as an addition to their diet. There is no product made with the Turkish sausage method. It is the only product prepared to meet the daily needs of the dog on its own. It is the first in Turkey and in the world. Sucuk foods are also important in terms of evaluation of animal and vegetable products and foods that are undesirable for human consumption. These products are very useful in terms of preparing and storing wasted restaurant and restaurant waste and leftover food and food in the form of sausage and can be used practically in the feeding of dogs. Sucuk food will also prevent imported dry and wet foods, which are quite expensive in Turkey, and thus will provide important economic contributions.

Description

2. TR TR TR DESCRIPTION Alternative Dog Diet: Sucuk Food 1. Technical field: The invention relates to a diet obtained by combining natural products and foods and preserving them in the form of sausage for use in dog feeding. Sucuk food is a fermented natural nutritional product that can be composed of a mixture of animal and plant products and table scraps that are not for human consumption. 2. State of the Art: The number of people who want to feed their dogs naturally is increasing day by day due to the increase in the prices of commercial dry dog food and health problems related to feeding. Experts and veterinarians are consulted about natural nutrition, but since there are not enough scientific studies on natural products and balanced homemade diet, this work is done through hearsay. In foreign countries, diet (salami-sausage) and snacks (fermented meat products) are prepared to meet the daily needs of dogs. ) products are available in the market. The nutritional content of these products on the market is not at a level that meets the daily needs of the dog. Feeding only these products is insufficient for dogs. That's why they are produced as snacks and rewards for dogs. It is quite troublesome to prepare daily dog diets that use a combination of animal and plant sources. They can be prepared in excess and stored by freezing. However, thawing enough food to eat daily is also a waste of time. Homemade diets can also be used raw. Raw diets for dogs are both very risky in terms of health and require experience to prepare. Sausage food is a canned version of dog diets using Turkish sausage logic. It can be used for months without spoiling when stored in the refrigerator. This product is not in the form of snacks or treats imported into the market. It is sufficient and balanced in terms of nutrients required for dogs. It is also healthy because it is fermented products. Thanks to fermentation under suitable conditions, harmful microorganisms do not grow. Dogs can be fed daily with only this product. There is no need to give extra food. The invention was first submitted to the Selçuk University Scientific Research and Projects Coordinatorship with the title "Production of sausage food for dogs and determination of its quality characteristics". The preparation of sausages in the project is as follows: Two different sausage formulas, grain-based and grain-free, were prepared (Table). The formulas have been adjusted to meet the nutritional needs of a healthy adult dog according to FEDIAF (European Federation for Pet Nutrition). The grains were ground in the mill using a 0.5 mm diameter sieve and added to the sausage mixture. In the grain-free sausage formula, peas, potatoes and carrots were used instead of grains. Meat products were turned into minced meat by passing them through a 3 mm sieve using a grinder. All plant sources (peas, carrots, potatoes, rice, barley) were dried at 5 - 5 oC for 48 hours and ground before mixing and added to the sausage mixture. Table 1. Contents of sausage foods Grain % Grain-free % Rice, barley 42.38 Vegetables 47.00 Chicken and beef 34.00 Chicken and beef 32.37 Garlic 0.10 Garlic 0.10 Vitamin-Mineral 1 .47 Vitamin-Mineral 0.5 3 All components were homogenized using a hand-held mixer. It was mixed in some way. The mixtures were filled into intestinal bags using a hydraulic filling machine. The sausages were kept in a laboratory environment at 23-25°C and 75-95% relative humidity to ripen. When the pH of the sausage foods was between 4.7-5.4, they were placed in vacuum bags. After this process, all sausages were stored in the refrigerator (+4°C). Microbiological analyzes were performed on the produced sausage foods in the 1st, 3rd and 6th months of storage in the refrigerator. Analysis results are given in table 2. Since sausage food production is carried out under suitable conditions, microbiologically safe products have been obtained. The food produced is both nutritious and healthy for dogs. The nutrient analysis results performed on the first day (0) and the 1st, 3rd and 6th months of storage are shown in table 3. According to the statistically evaluated nutrient results, no nutrient loss was determined in sausage foods at the end of the 6-month period. Since a sufficient pH drop was determined, it is understood that appropriate fermentation was achieved. Table 2. Purpose of Invention: The purpose of sausage food invention is to create fermented products prepared at appropriate nutritional levels for the natural and balanced nutrition of dogs. Reasons for creating this product; -The fact that fermented animal products produced with the sausage technique are only available on the market as snacks and reward foods in the world -There is no product that has previously been fermented and marketed to provide natural or organic diets that will meet the needs of dogs -There are many products such as salami sausages sold to meet the daily needs of dogs. low fiber and carbohydrate content -Additives added to form salami -Lack of home-style dog feeding products in the form of fermented sausages, which have a high shelf life and can last for a long time without spoiling after opening -Interest and demand for home-style diets in the field -Meals and food offered for human consumption Efficient and healthy use of leftovers in dog feeding - Produced sausage foods are obtained as a result of being left to completely spontaneous fermentation without containing preservative additives such as nitrate, nitrite and monosodium glutamate - Being completely natural products. It is an ideal product for those who want to feed organic and home-style dogs. 4- Applications of the invention to the industry: While producing the products known as Turkish sausage in the world, fermenting the meat by filling it in intestines or artificial clays and making it able to be stored without spoiling for a long time is a process that has existed in the industry for years. It is possible to produce sausage foods that will be considered as dog food in similar facilities. In Turkey, most of the dog foods (dry and canned food) are imported and expensive foods. Preliminary studies have determined that sausage foods are consumed by dogs with pleasure. Sausage foods will also be very beneficial for the country's economy. Because, once sausage foods proven by scientific data and produced entirely from domestic resources are introduced to the market, they will block imported foods. TR TR TR
