Abstract
Sucuk mama, köpekler için alternatif bir doğal diyettir. Sucuk şeklinde hazırlanmış bu ürünlerle uzun süre bozulmadan kalabilen doğal ev tipi diyetler sağlanmıştır. Sucuk mamalar hayvansal ve bitkisel ürünlerin bağırsağa doldurulup olgunlaştırılmasıyla hazırlanmış ve 6 ay +4°C sıcaklıkta(buzdolabı) bekletilmiştir. Belirli aralıklarla besin madde ve bakteriyel analizleri yapılmıştır. 6 aylık süre sonunda sağlıklı ve yeterli besin madde içeriğine sahip mamalar elde edilmiştir. Son yıllarda insanlar arasında ilgi gören organik ve doğal besleme konusu pet hayvanlarının, özellikle köpeklerin beslenmesinde de popüler hale gelmiştir. Köpek sahipleri içeriğini bildiği ve doğal ürünlerle hazırlanmış diyetlerle köpeklerini beslemek istemektedir. Ev yapımı diyet hazırlamak zaman alıcı ve maliyetlidir aynı zamanda dengeli bir diyet hazırlamak oldukça zordur. İnternet sitelerinde genellikle köpeklerin sevdiği yiyeceklere dayalı, bilimsel dayanağı olmayan diyetler hazırlanmaktadır. Hazırlanan diyetler günlük olarak tüketilmezse dondurulup saklanması gerekir. Sonrasında eritilip köpeğin ihtiyacı kadar yedirilmesi de ekstra zaman kaybıdır. Elde edilen sucuk mamalar ise kullanması oldukça pratik ve bilimsel olarak kanıtlanmış ürünlerdir. Üretilen bu ürünler ilk olarak Selçuk üniversitesi BAP koordinatörlüğüne projelendirilmiş ve proje desteklenerek başarı ile sonuçlandırılmıştır. Yürütülen bu ön proje ile farklı içeriklerle hazırlanmış sucuk mamaların köpeklerde sindirilebilirlik düzeyi, besin madde içeriği, enerji düzeyi, tüketilebilirliği, raf ömrü ve mikrobiyolojik açıdan güvenirliği belirlenmiştir. Yapılan literatür araştırmaları sonucu dünyada benzer bir ürüne rastlanmamıştır. Yabancı ülkelerde köpekler için salam sosis benzeri ürünler vardır. Bu ürünler köpeklerin sevdiği fakat oldukça pahalı ürünlerdir. Ayrıca besin madde açısından dengeli ve yeterli olup olmadığı hakkında bilimsel çalışma bulunmayan ürünlerdir. Köpekler için satılan fermente et ürünleri ise tamamen ödül maması şeklindedir. Günlük ihtiyaçlarını karşılayacak ürünler değildir. Mama veya diyetlerine ilave olarak verilen atıştırmalıklardır. Türk sucuğu metoduyla yapılmış bir ürün bulunmamaktadır. Köpeğin günlük ihtiyacını tek başına karşılayacak şekilde hazırlanmış tek üründür. Türkiye'de ve dünyada ilk niteliğindedir. Sucuk mamalar, insan tüketimine sunulması sakıncalı olan hayvansal ve bitkisel ürün ve gıdalarının değerlendirilmesi açısından da önem arz etmektedir. Bu ürünler boşa giden restoran ve lokanta atık ve artık yemek ve yiyeceklerinin de sucuk şeklinde hazırlanarak saklanması ve pratik olarak köpeklerin beslenmesinde kullanılabilmesi açısından oldukça faydalıdır. Sucuk mama üretimi uygun kosullarda yapildigi için mikrobiyolik açidan güvenilir ürünler elde edilmistir. Üretilen mamalar köpekler için hem besleyici hem de sagliklidir. Ilk gün(0) ve depolamanin 1., 3. ve 6. ayinda yapilan besin madde analiz sonuçlari tablo 3,te görülmektedir. Istatistiksel olarak degerlendirilen besin madde sonuçlarina göre sucuk mamalarda 6 aylik süre sonunda besin madde kaybi belirlenmemistir. They can be prepared in excess and stored by freezing. However, thawing enough food to eat daily is also a waste of time. Homemade diets can also be used raw. Raw diets for dogs are both very risky in terms of health and require experience to prepare. Sausage food is a canned version of dog diets using Turkish sausage logic. It can be used for months without spoiling when stored in the refrigerator. This product is not in the form of snacks or treats imported into the market. It is sufficient and balanced in terms of nutrients required for dogs. It is also healthy because it is fermented products. Thanks to fermentation under suitable conditions, harmful microorganisms do not grow. Dogs can be fed daily with only this product. There is no need to give extra food. The invention was first submitted to the Selçuk University Scientific Research and Projects Coordinatorship with the title "Production of sausage food for dogs and determination of its quality characteristics". The preparation of sausages in the project is as follows: Two different sausage formulas, grain-based and grain-free, were prepared (Table). The formulas have been adjusted to meet the nutritional needs of a healthy adult dog according to FEDIAF (European Federation for Pet Nutrition). The grains were ground in the mill using a 0.5 mm diameter sieve and added to the sausage mixture. In the grain-free sausage formula, peas, potatoes and carrots were used instead of grains. Meat products were turned into minced meat by passing them through a 3 mm sieve using a grinder. All plant sources (peas, carrots, potatoes, rice, barley) were dried at 5 - 5 oC for 48 hours and ground before mixing and added to the sausage mixture. Table 1. It is an ideal product for those who want to feed organic and home-style dogs. 4- Applications of the invention to the industry: While producing the products known as Turkish sausage in the world, fermenting the meat by filling it in intestines or artificial clays and making it able to be stored without spoiling for a long time is a process that has existed in the industry for years. It is possible to produce sausage foods that will be considered as dog food in similar facilities. In Turkey, most of the dog foods (dry and canned food) are imported and expensive foods. Preliminary studies have determined that sausage foods are consumed by dogs with pleasure. Sausage foods will also be very beneficial for the country's economy.
