The invention relates to the food industry, in particular to the tea, and can be used in tea factories of primary processing,
The purpose of the invention is to increase productivity.
Обезвоживание перед стадией гранулировани провод т с удалением 20-70% воды из ее общего содержани .In the method of stepwise granulation, the first stage is carried out by passing the mass through the diaphragms with a screw or rod, and the second stage of granulation is carried out by rounding. Depending on the water content on the surface of the granules, before the second stage, the granulated mass is moistened, which contributes to the rapid erasure of the edges of the agglomerates with the formation of a spherical shape. Dehydration prior to the granulation stage is carried out with removal of 20-70% of water from its total content.
In the production of granulated tea to create durable granules, the presence of pectic substances in the sheet, especially of hydro-pectin, plays a major role; however, with an increase in the content of propectctin, the content of hydro-pectin gradually decreases. During the drying period, under the action of the thermal agent, there is a partial transition of protopectin to hydropectin, which then acts on the surface of the sheet, making it sticky. In addition, drying prevents abundant secretion of cell sap when passing through a diaphragm granule and losing it.
By wrapping the formed agglomerates, the faces of the granules obtained after the first stage of granulation are erased, spherical and hardened.

To speed up the erasing of the granule faces, before the second stage of granulation, the mass is moistened, while grinding is performed before the moistening at a ratio of particle diameter and height to predominantly 1: 1. The combination of two granulation methods leads to an increase in productivity.
Example 1. The chopped tea leaf is ground in a B2-FPI machine or known machines twice, after the second grinding stage, the mass is dewatered by blowing out thermal air of 70-90 ° C with removing 20-70% of water from its total the surface of the sheet contains the pectin substances contained in it, which impart a stickiness to the mass; the mass is passed through an auger granulator equipped with a diaphragm.
Next, the mass is moistened by spraying water (or other additives) at a ratio of water to weight 1: (18-20), then sent to a pelletizer for pelleting, where mainly spherical granules are formed. The granulated mass is dried.
1:1.Example 2. The method is carried out analogously to example 1, except that the dewatered mass after granulation is calibrated (cut), with the ratio of the length and diameter of the granules being mainly 1: 1.
The application of the proposed method provides an increase in productivity while maintaining the porosity and strength of the spherical shape of the granules.
