Изобретение относитс к производству продуктов из частично клейстеризованного крахмала и может найти применение в крахмалопаточной промышленности. Цель изобретени заключаетс в улучшении качества саго. Способ производства саго из крахмала заключаетс в следующем. В сухой крахмал ввод т воду в количестве, обеспечивающем содержание ее в крахмале 32 - 42%. Смесь тщательно перемешивают и осуществл ют тепловую ее обработку и формирование гранул путем экструзии увлажненного крахмала при температуре 60 - 80°С.
