Abstract
Изобретение относитс к пищевой промышленности, пищевой биотехнологии. Цель изобретени - повышение выхода готового продукта и улучшение его качества. Способ заключаетс в следующем: используют зерновую спиртовую бражку двух - или трехсуточного брожени или их смесь с содержанием спирта 6,8-8,5%, от которой предварительно отдел ют осадок, смешивают его с 30-40%-ным раствором спирта, смесь выдерживают 8-12 ч дл автолиза и экстракции биологически активных веществ, содержащихс в осадке, декантируют и осветленную часть задают в исходную, отделенную от осадка, зерновую сушильную бражку до получени концентрации спирта в смеси 9,2-10% с последующим окислением обогащенной среды уксуснокислыми бактери ми в услови х аэрации и перемешивани среды с отбором готового уксуса. 1 табл.The invention relates to the food industry, food biotechnology.
