Изобретение относитс к пищевой промышленности и может быть использовано в технологических процессах сбраживани сахаросодержащих растворов с получением спирта, а также дл сбраживани сточных вод пищевых предпри тий с целью их очистки. Цель изобретени - ускорение процесса брожени . Брожение осуществл ют дрожжами рода Saccharomyces. При этом в упаренный и охлажденный сахаросодер- жащий раствор добавл ют диаммоний- фосфат и 0,05-0,07% сухой биомассы гриба Fusarium Culmorum ЦМПМ F-258.The invention relates to the food industry and can be used in the technological processes of fermentation of sugar-containing solutions with the production of alcohol, as well as for the fermentation of wastewater of food enterprises for the purpose of their purification.
