Цель изобретени повышение объ ективности оценки качества м са, сок ращение длительности процесса,, а так же предотвращение убо ценных дл селекции животных Сущность способа оценки качества м са сельскохоз йственных: животных заключаетс в тбм, что отбирают проб м са при жизни ло-шотного, сдавливают пробу и определ ют нежность м са по значени м его оптической плотности., измеренной путем пропуска через пробу м са светового потока длиной волны 600-680 нм. Пропускание через сдавленный образец светового потока длиной волны 600-680 нм позвол ет оценить оптичес кую плотность образца мышечной ткани котора характеризуетс степенью про пускани видимых лучей мышечными волокнами и зависит от пучков, степени прилегани их друг к другу, от их механических свойств, т.е. от тех факторов, которые определ ют параметр - нежность« Определение нежности м са по значени м его оптической плотности позвол ет исключить трудоемкие операции как измельчение в фарш образца м са, вз тие навески фарша, измерение площади п тен планиметром и тем самым сократить длительность процесса. Дл измерени оптической плотности доста точно образца м са, вз того методом б - опсии, что позволит оцвнивать качество м са .животного еи;е при его жизни и предотвратить убой ценных дл селекции сивотньгх. П р и м е р. Непосредственно при жизни животных отбирают образщз (биопси ) мьшгечной ткани животных, в виде круга диаметром 8 мм и толиданой 2,5 ммс На эту операцию затрачивают .не более 10 мин. Каждую пробу сдавливают (раздавливают) усилием 3 кг между двум предметными стекла&ш .е течение 1 мин.
