2v The invention relates to food industry, in particular to equipment for volumetric dosing of yeast dough. . A known method of dosing a yeast dough is that the dough immediately before dosing results in a constant density by intensively grinding the gi. However, this increases the time of the subsequent heat treatment, since in order to obtain the effect of the use of yeast, the dough is again proofed. The closest in technical essence and the achieved result: to the proposed method is a volumetric dosing of yeast that includes creating an overpressure in the bunker over the dough and outputting dose 2. Under this condition, the dough from the bunker into the dosing unit is constant, and since the density the test changes during the dosing process (decreases), the stability of the mass of the dose is not ensured; The purpose of the invention is to ensure the stability of the mass of the dose. This goal is achieved by the fact that, according to the method of volumetric dosing of yeast dough, which includes creating an overpressure in the bunker over the dough and delivering the dose, the pressure in the bunker is increased during the dose issuing process at a rate of 0.8-1.2 ppi / h. The drawing shows a scheme for implementing the method of volumetric dosing of yeast dough. The method of dosing involves filling the bunker 1 with a dough of the appropriate recipe (for making flour culinary products: fritters, pies, donuts) and dividing it into portions with a dosing unit 2

В таблице приведены результаты испытаний машины дл приготовлени оладий при различн1 1Х вариантах изменени скорости повышени давлени .0.07 0.14 77.8 0.21 79.2 0.28 79.0 0.35 79.5 V compressed air is fed through the control valve 4 through the control valve 4 through the control valve 4, while decreasing the density of the dough in the storage tank 1 the pressure is evenly increased, thereby compensating for this by increasing the flow rate of the dough out of the hopper to reduce the density due to fermentation. The degree of pressure increase depends on the intensity of the biochemical processes occurring in the test and is equal to 0.8 1, 2 aty / h. Example 1. When dosing the dosing in a dosing unit, the pancake machine (tank capacity 20 l, duration, dosing 30 min) uniformly increases the pressure above the dough at a rate of less than 0.8 at / hr (the excess pressure is replaced uniformly from 0 to 0.3 air over 30 minK. The mass of fritters is below the permissible limits (less than 72 g; permissible mass of fritters is 75 ± 3 g.) Example 2. The method is carried out under the same conditions as in Example 1, however the pressure in the hopper is increased at a rate whose magnitude is It ranges between 0.8 1 and 2 atm / h, for example 1.0 at / h (the pressure value is increased uniformly from 0 to 0.5 atm for 30 min.) The weight of the pancake does not exceed the permissible values (7513 g) P and m ie p 3. The implementation of the method at a rate of increase in pressure of more than 1.2 MPa / h results in fritters having a mass of more than 78 g, which is above permissible limits. Consequently, the optimum rate of increase in pressure in the bunker is 0.8. -1.2 ati / h The table shows the test results of the pancake machine for various 1X variations in the rate of increase in pressure.

25The table shows the average masses of the pancakes, the dosing of which was carried out with a uniform increase in pressure in the bunker. 25
В св зи с тем, что по мере уменьшени плотности увеличиваетс объем теста, поступающего в дозатор (вследствие соответствующего увеличени Давлени ,}, обеспечиваетс стабиль- Q ность массы дозы при дозировании дрожжевого теста в процессе брожени ,.;.Due to the fact that as the density decreases, the volume of dough entering the dosing unit increases (due to a corresponding increase in Pressure,}, the stability of the mass of the dose is ensured when dosing the yeast dough during the fermentation process.;.

Изобретение, обеспечива стабильность дозировани и, следователь но , стабильность массы готового продукта в допустимых дл реализации пределах, позволит исключить взвешивание и перейти к штучной реализации что даст экономию людских и финансовых ресурсов на предпри ти х торговли и общественного питани .The invention, ensuring the stability of dosing and, consequently, the stability of the mass of the finished product within acceptable limits for implementation, will eliminate the weighing and proceed to the unit implementation, which will save human and financial resources on trade and public catering.
