Abstract

The invention relates to a fish filleting device comprising a series of successive guides for introducing, directing and transporting the fish while processing them, together with a system of blades. The latter consists of both disc blades 1 for cutting out a strip of fish meat from the lower abdomen, and of two filleting knives 2, which are held in a supporting organ and are arranged in front of each other. A retractor or spreading device 4 is arranged between the cutting edges of the knives 2 and the disc blades 1. The filleting knives 2 are annular, and their cutting edges point in the direction in which the fish are moving and are coaxial with the lateral sides of the retractor 4, which are cylindrical in the area in front of the cutting edges of the knives 2. Each support of the filleting knives 2 comprises a ring that has a segment-shaped cut-out or recess in the filleting zone, which recess houses an ejecting device that removes the fillets. The support for the filleting knives 2 also comprises an insert 7, which is arranged on the flat surface of the ring and is fitted with a groove. The shape of the latter corresponds to the profile of the shoulder of the knife 2. The guides for introducing, directing and transporting the fish during their processing consist of two transporters, namely a feed transporter 13 and a work transporter 14, each of which is fitted with two mutually parallel endless conveying organs. The two transporters 13,14 are so arranged that the outlet end of the feed transporter 13 overlaps the inlet end of the work transporter 14.
