Abstract

A stable fruit juice powder which is low in hygroscopicity is prepared by employing a carrier for the solid dehydrated fruit juice, said carrier comprising an easily cold water soluble starch hydrolyzate having a DE of 2-5 and 95% weight % or more amylopectin content. The juice may be any fruit or tomato juice.
